While there are many fantastic pairings for Thai Dry, one of our favorites here at Voodoo Chile is on mac & cheese. Also awesome on popcorn, pork rinds, seafood, chicken salad, and most anywhere you would think of adding Sriracha.

BOURBON BACON HONEY TIPS
Cubed Pork Belly treats, Voodoo Chile BBQ style

Similar dishes have made the rounds in the BBQ world for some time now, and in recent times being referred to as "burnt ends," but we'll save the debate of terminology for another day. This recipe is nothing short of stellar. Cheers!

INGREDIENTS
- 1 Skinless Pork Belly
- Favorite Pork Rub
- Apple juice for spritzing
- Wire rack
- glass (or disposable aluminum) pan

Home rolled BOURBON BACON HONEY sauce
- 1/8 C Bourbon
- 1/4 Honey
- 1~2 Tbsp Porcus, bacon hot sauce

1. Cube the pork belly into 1” x 1” cubes.

2. Liberally apply your favorite pork dry rub

3. Allow the seasonings to settle onto the meat while preparing your smoker and allowing it to reach 250F and stabilize.

4. Placed cubed pork belly on a wire rack and into your smoker. Allow to cook for 2~2.5 hours, spritzing every 40~45 minutes with apple juice.

5. Prepare the Bourbon Bacon Honey sauce.

6. Using a pair of tongs, transfer the meat into a aluminum or glass pan, and then add Bourbon Bacon Honey sauce. Make sure all cubes are well coated, and then smoke for another hour or so until the sauce is reduced and somewhat caramelized.

7. Place the pan into the smoker, uncovered for another hour or until all liquid has reduced and caramelized.

8. Allow to cool for 10~15 minutes, and enjoy!

Hot! Damn It's Friday

Grilled Mojo Chicken with Voodoo Chile Sauces Bloodline (made with Blood Orange Ale by Flying Dog Brewery)

I believe I've discussed Bloodline Hot Sauce from Voodoo Chile Sauces before but I've enjoyed it so much I thought I'd mention it again. It features the Blood Orange IPA from Flying Dog Brewery. This is a very approachable sauce with a slightly sweet citrus flavor and medium burn from the habanero, fatalii and cayenne peppers.

The sauce is excellent on it's own but I found it is a great addition to any citrus based marinade. I recently added it to some Grilled Mojo Chicken and was floored at the explosion of flavors. In Cuban cooking, mojo is typically any sauce that is made with garlic, olive oil, and a citrus (traditionally orange juice). It's commonly used to flavor roasted pork but works perfectly with chicken as well.

To grill the chicken, simply grill with direct medium high heat (about 375 degrees) for 5 minutes (turning once) and move indirect until the internal temperature is 165 (roughly 30 minutes or until juices run clear). If you want some additional flavor (and crust) baste with reserved or boiled marinade every 10 minutes.

Marinade

1/2 cup fresh orange juice
2 TBSP fresh lime juice
2 TBSP soy sauce
2 TBSP olive oil
1 TBSP minced garlic
1/2 tsp ground cumin
1/4 tsp freshly ground pepper
1/4 cup Voodoo Chile Bloodline Hot Sauce

All Purpose Rub

1 cup coarse sea salt or kosher salt
2 TBPS freshly ground black pepper
2 TBSP garlic salt
1 tsp cayenne pepper

Far more important than it being another record breaking year for us has been the feedback, encouragement and reviews we're received from fans far and wide.
