Blistered to perfection, these shish*to peppers bring the flavor and heat! They’re a great snack or side dish as the weather warms up.

Ingredients
- 8 ounces of shish*to peppers
- 2 tablespoons of vegetable oil
- 1/2 teaspoon of salt

Procedure:
1. Heat a large, heavy-bottomed pan (such as cast iron) over high heat for about 1-2 minutes or until it is hot enough to steam a drop of water instantly on the surface.
2. Add the oil to the pan, followed by the shish*to peppers in a single layer so that all of the peppers touch the surface of the pan on some sides.
3. Turn the heat down to medium and cook the peppers for about 3 minutes without touching them so that the skin side in the pan becomes a dark brown and they start to blister.
4. Flip the peppers and continue to cook on the other side for another 1 to 2 minutes.
5. After both sides are dark and blistered, remove the peppers from the pan and sprinkle them with salt. Serve warm.

Our 2nd cookbook, Charcuterie by Occasion, is out!! 🙌🏼 It includes 50 boards + supplemental recipes like hush puppies, chocolate cake truffles, and more!

This book was another labor of love and dare we say even more creative and challenging at times than butter boards was. We only had about 3 months to complete it and every single weekend leading up to the deadline was spent in the kitchen. We’re so proud of it and hope you’ll love it ♥️

A Valentine’s Day Bouquet of “Flowers” Charcuterie Board 💓💐

Procedure:
1. Fold a piece of brown craft paper into a rectangular shape, then fold the sides at an angle, creating almost a triangle. The bottom should be closed but the top should remain open. Tie a ribbon or piece of twine around the middle or bottom to secure. Add greenery and herbs as decor.
2. Grab 10-12 skewers and create charcuterie skewers mixing the cured meats and cheeses. Make sure to add strawberries and/or dried apricots to some of the skewers. The charcuterie skewers should vary and not all be the same.
3. Place the charcuterie skewers in the opening of the craft paper cone, staggered throughout and focusing on different heights. Some skewers should go deeper into the cone and others should be placed higher.
4. Once all charcuterie skewers are placed, twist the prosciutto and place them where there are any gaps. Repeat this process with any extra charcuterie or fruit.
5. Decorate the charcuterie bouquet with lavender, mint, dehydrated orange wedges, and edible flowers.

One of my favorite snacks is stuffed dates specially these with the creamy tang of mascarpone! Accented with hints of lemon, cinnamon, nutmeg, and vanilla, this easy-to-make snack will soon become one of your favorites too.

Ingredients for 8 dates:
8 large dates (pitted)
2 ounces of mascarpone
⅛ teaspoon ground cinnamon
⅛ teaspoon of ground nutmeg
The juice and zest of 1 lemon
⅛ teaspoon of vanilla extract
1 pinch of salt

Procedure:
1. Put your mascarpone into a bowl and add the cinnamon, nutmeg, vanilla, salt, zest, and juice of a lemon and mix until everything is fully combined and the mascarpone seems light and airy. Adjust the seasoning to your liking and transfer the filling into a pastry bag with no tip.
2. Gently cut each date lengthwise on one side so that the center is exposed but the date is not fully cut in half. Pipe enough filling into each date so that each date is full, and press each date almost closed so that the filling pokes out of the cut side.
3. Garnish each date with additional lemon zest or a sprinkle of cinnamon and serve chilled or at room temperature.

Need a little pick me up? This vanilla iced coffee smoothie with banana and cacao is delicious, nutritious and energizing! Even better, it has no refined sugar and it’s protein-packed.

Ingredients:
½ frozen ripe banana
1 scoop no sugar added vanilla protein powder
½ cup of the milk of your choice
½ cup of iced coffee
½ cup cubed ice
1 tbsp of cacao
1 date
1 tsp of vanilla extract
1 tsp of ground cinnamon

hi friends, it’s a been a while! I’ve missed you 🥲 I’ve been thinking about this account a lot and have a few thoughts on my mind mostly about how showing up on social media is a LOT of work. I’m so grateful for Off The Line because it has brought us so many wonderful opportunities but it’s hard not to get trapped in the number of followers, views and engagement. You have to show up consistently which is hard with a full time job and in the process, sometimes you lose the fun of it all. We start overthinking… do we do videos? And if so, is it voiceovers or music? Should they be more spontaneous or planned? What if we do photography? But wait, those don’t get nearly as many likes or views. How much personal stuff do I show? Do people even care? Are people making our recipes? Am I posting this because I like it or because I think it’d get views? This feels like more my account but wait, Jamie makes the recipes. How does that work?

I want to get back to posting on here for me. I want it to be fun and inspiring and exciting and if that also evokes the same feelings to others then that’s wonderful but if not and our followers don’t grow, then that’s okay too.

I’m learning and growing and so is this account. Jamie and I have worked on three cookbooks now so maybe I’ll start with sharing those photos and recipes for now, and see where that takes us 🤎

Surprise, we wrote a cookbook!!!! This is such a pinch me moment and we cannot believe to be sharing this with you all. Our food blog started as a fun way for us to be creative and have fun and it’s crazy to think that it’s led to this incredible opportunity.

You might remember the butter board trend, and like many, we hopped on it and created our own version. Little did we know that we’d be approached to create a butter board cookbook! From the photography taken by me, the recipes created by Jamie and the writing by both of us, this cookbook is 100% our vision.

Pickled watermelon rind is our favorite summer snack! 🍉 It’s sweet and tangy and best of all, reduces food waste! Add it to your salads, eat with with cheese and charcuterie, or just on its own.

Ingredients:
1 pound of watermelon rinds
1 ½ cups of water
¾ cup of champagne vinegar
¾ cup of sugar
3 tablespoons of salt
3 whole cloves

While I like an extremely styled photo, I find myself leaning towards simplicity and letting the colors and textures of ingredients captivate me. These are pickled red onions. Nothing fancy about this photo but I love it.

And while I’m at it, I hope you don’t mind me treating this account as a photo diary as well (recipes won’t go!). We’ve been working on two projects (to be announced soon), and I’ve just realized that I love food photography and want to dedicate more time to growing my skills and documenting the journey.

One of our all time favorite vinaigrettes! It has bursts of lemon, mint, strawberry and white balsamic. Perfect for your summer salads!

Ingredients 🍓
¼ cup of strawberries
The zest and juice of 1 lemon
1 tablespoon of dijon mustard
1 tablespoon of honey
4 ounces of white balsamic vinegar
⅓ of mint
8 ounces of vegetable oil
½ teaspoon of salt
