Did you know that black tea, green tea, white tea, oolong tea, and pu-erh all come from the very same plant?
The tea plant, Camellia sinensis, can be processed in different ways to create dramatically different flavors, aromas, and colors. Green tea is minimally oxidized, black tea is fully oxidized, and oolong falls somewhere in between. White tea is made from the youngest leaves and buds and undergoes very little processing.
Just like wine grapes, tea is also influenced by its terroir—the climate, soil, elevation, and growing conditions of the region where it is grown. The same tea plant grown in different parts of the world can produce remarkably different cups.
So what about chamomile, peppermint, rooibos, or hibiscus?
Technically, these aren’t teas at all—they’re tisanes, or herbal infusions. Rooibos comes from a South African shrub, while chamomile, peppermint, lavender, and countless other botanicals are herbs, flowers, fruits, or spices steeped in water.
