LET'S TALK ABOUT CHUCK EYE STEAK!!
Chuck Eye is the continuation of the Ribeye muscle into the cow's shoulder. Often called the "poor man's Ribeye," it delivers the same beefy flavor and excellent marbling at a fraction of the cost, though it is slightly less tender and contains a bit less fat.
A cow yields exactly two chuck eye steaks. Because they are cut from the fifth rib of the cow (right next to the 6th–12th ribs where the premium ribeye is cut), this limits the yield to just one steak per side of beef.
