MEAL PLANNING

Meal planning is a wonderful tool I use for planning nourishing, homemade meals for my family each and every week. With the constant moving parts of family life, running kids here and there, errands, homeschooling, homemaking, and homestead chores, there is no way I would be successful at feeding my family home cooked meals every day of the week if I did not meal plan. Not to mention, the mental load it takes off of me every day to know that meals are already planned out for the day when I wake up every morning!

I normally meal plan for 3 months at a time, taking one morning while the house is still asleep to set down with a cup of coffee and plan away. Here is how I plan:

-Breakfast follows a very similar pattern each week. For example, Oatmeal on Monday’s. Muffins/Breads on Tuesday. Waffles/Pancakes on Friday… etc…

-Lunch each day is leftovers. Because I cook so much, we are never in short supply of leftovers. Making the decision while cooking supper throughout the week to prepare just a little more than we need for supper, leaves us with lunch options for the entire week as well. This also makes life in the middle of our homeschooling day so much easier since I don’t have to plan time to cook or prep food for lunch.

-Supper also follows a similar pattern. Not so much on specific meals, but just a broad category. For example, Sunday is soup night. Tuesday is pork night, Wednesday is crock pot night… etc… Then I plan meals within those categories. We definitely have some favorites within each category, but I also try to include at least 3-4 new recipes in each category during that 3 month period. So maybe 1 completely new to us recipe per month per category. If we like it, I will add it to my recipe arsenal. If we don’t, I just don’t make it again.

On Sunday afternoon, I look at the plan for the week and get out any meat that needs to be thawed for the entire week and transfer it to the fridge. This simple step sets my week of cooking up for success as well, because everything is thawed out and ready to go whenever I need it. Again, decreased mental load each day.

If you are looking to add more home cooked meals to your week, I really suggest starting with meal planning to set yourself up for success. I am going to start sharing our meal plan for the week every Monday, with hopes to offer some inspiration and encouragement if you’re looking for a more solid home cooking routine.

It’s that time of year again! Elderberry Syrup Orders!

Elderberry Syrup: made with organic elderberries, organic cinnamon, and raw unfiltered honey. It doesn’t get any better than simple ingredients.

Just like every year from Fall to Spring, our family will include elderberry syrup in our daily routines to help keep the yuck and colds away. Elderberries are amazing immune system boosters and are rich in antioxidants, helping to fight off inflammation and reducing histamine release, as well as protection against other chronic conditions.

$15 for 8 oz jar
Keeps in the refrigerator 2-3 months

It’s been quite a while since we shared anything from the homestead! A little over a year actually!

This past year has been a weird one for us. Homesteading, living the most self sustainable lifestyle that we can, and homeschooling our children have been our way of life for almost the last 10 years. For most of our marriage, when I really stop to think about it. And now, we’ve entered into a season where our children are not so little anymore. Their homeschooling days are much fuller, and they are much more involved in things off the homestead than they’ve ever been before. Which is so much fun to watch them chase their dreams, but it also keeps us very busy. This new season caused us to take some time this year to reevaluate our plans and dreams for our homestead and our family.

We sold off our dairy herd, both cows and goats. We downsized our huge garden and chicken coop. We sold our tractor. We tore down the pig pen. Our daughter made the extremely hard decision to rehome her pony she had outgrown. And a couple months ago, we briefly listed our homestead for sale. When we listed, we thought it was the right thing for our family. But we quickly figured out after listing that it definitely was not.

This way of life has been engrained in me since I was a child. I will never speak of homesteading and fail to speak of my late grandmother in the same breath, because without her helping to raise me in this lifestyle, we wouldn’t be where we are today. We would have failed or given up a long time ago. And I guess in some ways, this way of life is a way for me to stay connected to her, to connect her to our children. Because I wish so much she could have known them and held them.

Listing our homestead and having people come tour it and fall in love with it made it really hard to consider leaving. What it did instead, was push us to look at our values and way of life and figure out how we can alter some of our plans to fit this new season we are in. I am so thankful for this past year and what it has revealed to us, and the direction it has shown us our homestead needs to go.

With a new direction comes a few new ways we hope to share our homestead with you and some ideas we are putting out there:

-My homestead kitchen will be offering homestead and baked goods again! Possibly even setting up at some local markets here and there.
-Organically started and grown plant starts
-We will be establishing a beef herd out here this year, taking the place of our dairy cattle. Beef coming soon(ish) friends!
-We always raise pigs to fill our freezer each year, but we are considering raising extra to bring fresh pork available to you as well.
-At least doubling the size of the chicken coop to have more free range eggs to offer
-Brush hogging services
-Educational opportunities: scratch cooking, how-to’s, cookie decorating, butchering classes.. and more!

Changing direction feels like starting over in some ways, but I know it’s really not. Good things are to come friends!
