Taking advantage of the small (and bitter)dandelion greens from my yard to make a delicious grain salad for lunch today! The greens are delicious, also on a BLT sandwich, with some D leaves subbed in for the L.

No Mow May has yielded a field of dandelions and a tasty salad of greens from my yard! The idea was started in England to help pollinators thrive. It sure has worked in our yard!

Summer Sizzler Lexington July 11-14. In person Cooking 3:30-6:00 pm Our afternoons will be filled with learning to cook creatively with seasonal foods, hone up on knife skills, and follow a recipe as students prepare their own dinner, Recipes will include: Handmade Tortellini with nut-free pesto, Homemade Ice Cream, Berry Cobbler, Chicken Mole and more. Recipe are all hands on, and teach kids who want to cook at an advanced level. Additionally we will have a field trip to the Lexington Farmers' Market. Kids will be divided in to small groups, and asked to compete in a food competition style challenge to shop for a local seasonal recipe. We recently cooked a recipe we call Energy Bites and we think these treats are so packed full of healthy energy that you feel like you are chomping on the sun! We start with creamy sunbutter, made from sunflower seeds. Have you ever seen baseball players chewing on seeds? Eating these seeds helps curb hunger pangs while providing many nutrients like Vitamin E, Magnesium, and selenium. All of which are vital to our health! We add in heart healthy oats, hemp and flax seed, and a few choco chips. Yum

Three days of Baking! We creamed, whisked and formed peaks. We baked, rolled and piped. We worked as a team, and we worked independently. And, at the end of it all we ATE. Thanks to the 16 kids that baked with us over school vaca through Wilmington Recreation. Amazing class, and talented kids.
Tuesday is day #1 of 3 of our vacation baking workshop in Wilmington for kids in grades 4-8! What a line up of recipes to learn, create, and take home to eat! We will be creating a Carrot and Coconut Roulade, mastering Meringue Cups filled with fresh Fruit, and decorating cookies! We can't wait to fire up the ovens and get cooking with some new friends. I can't think of a better way to start off the school vacation, then to cook with 12 young chefs to be! We created a Broccoli Mac and Cheese with Local Cheddar, organic milk, and beautiful broccoli. Yum, and so good for you, Broc is a member of the Brassica family and these lovely little tree shaped veggies are packed with vitamins and minerals. In fact, of the Brassica veggies, Broccoli contains the most carotenoids, a plant pigment that the body converts to vitamin A. And, Broccoli is and excellent source of Vitamin K, which helps preventing osteoporosis, a condition where the bones become weak and brittle. Vit K is a fat-soluble vitamin, meaning you need to eat fat with is so your body and absorb it! Mac and Cheese is perfect to absorb the vitamins in the broccoli. Thank you Cary Memorial Library for supporting healthy local cooking and eating!

Look whats cooking!
Our recent Cupcake Wars class with Wilmington rec was a tasty competition of cupcake vs cupcake. 12 young, aspiring chefs in grades 3-6 competed in a 2 hour Bake off & Decorating Challenge. Cake flavors were beet red velvet with Cream cheese frosting, vanilla with chocolate ganache, and Choco-mint with topping of chefs choice. It was a great in person!!!! class with so much creativity and talent, and good cheer! Thanks to all who baked with us. Let's do it again.
It's gonna be a soup day today. I am so fortunate that I was able to teach a Virtual Soup 101 class with kids from Cary Memorial Library yesterday! We practiced knife skills, learned good kitchen safety tips, and used all of our senses to create a delicious and nutritious bowl of Pear and Squash Soup! Fun class, amazing kids and parents. Thanks to Cary Library for making these classes available and for all the wonderful inquisitive families that join in on our cooking adventures..
