Such a beautiful sunny Saturday afternoon I decided to fire up the smoker and do some comp-style thighs well trying hone my techniques a bit.

Smoked 3 turkey breasts totaling 25lbs for our 4th annual Friendsgiving.
Smoked turkey is so much more flavorful than oven roasted.
These turkey breasts (and turkey parts for the dark meat eaters) spent 24 hours in the brine, followed by 24 hour dry in the refrigerator.
Seasoned with Lane's Turkey Time and smoked with pecan pellets for 2hrs and 15 minutes.
Meat was extremely moist and seasoning was awesome with savory Thanksgiving herbs.

Fired up the Camp Chef for some peach ribs and apple pie ribs. Each rack was rubbed with peach rub and apple pie rub, slow smoked then wrapped in peach pie filling and apple pie filling. These ribs were amazing!

Brined was the definitive winner by my family of judges πŸ˜‰

The brined chicken had a noticeably better texture in the meat and a good flavor from the brine.
However, the flavor in the injected chicken was delicious and a better flavor than the brined.

Both were very mosit and juicy.
