This account’s been dormant way too long. Mainly because being dad is way more important than being an IG chef/cook. Life has finally slowed down a little bit and I’m getting a chance to get back to one of my favorite activities. Girls were away tonight, so got a chance to cook for just me and my boy. He wanted steaks, so that’s what he got. An incredible Akaushi Ribeye paired with some cheesy mashed potatoes and lemon pepper asparagus. Hit the spot for both of us and we’re going to bed beyond full. Don’t get nearly enough nights like this and I count my blessings every time I do.

Three days in the row of being back in the kitchen has been good for my soul.
Pork tenderloin cooked to a perfect Medium coated with Black; paired with charred Broccolini and a killer Mac’N’Cheese (mixed with Roasted tomatoes, habaneros and bacon). Its been nice having a few nights off to get back to my happy place.

When it’s crazy “chili” outside here in TX, I gather up whatever I got in the fridge/freezer and make some chili to keep warm. Little bit of WarDaddy in my cup and even more in the pot with some axis deer meat and Chili Seasoning. Time to let this cook the rest of the day and warm up our souls at dinner time.

With the crappy weather rolling, we actually had a night off of sports. I was finally able to get back to one of my happy places; back in the kitchen. Chicken fried rice and Chicken&Mushroom dumplings were on the menu tonight and they were killer. Looks like we’ll be stuck at home the next few days, so it’s time to get back at it in the kitchen.

After a long day at work to end the year, it was a quick trip to the store to whip up our tradition of our New Year’s charcuterie board. Genoa Salami, Pepperoni and Capicola paired really well w/ some killer soft cheeses and pepper jelly. Added some homemade smoked Italian Sausage, some mozzarella wrapped with basil and prosciutto, then finished it with a bowl of killer Whipped Goat Cheese w/ Chile infused Bacon Fat & Hot Honey. So good and I’m so full. Hoping to hold on til midnight.

Happy New Year from the Whiskey Wasted family. We hope you and yours have a blessed 2022. 2021 was a rough one for us in a lot of ways and we are excited to put in our rearview mirror. Looking and moving forward though and know we have many blessings in store. Hope to see y’all in the new year.
