This Wednesday, Calypso Kitchen is bringing the island flavor to the kickoff of the 2026 Lagoon Concert Series at CSU Lagoon. While Ashley Wineland brings the country hits, we’ll be serving up jerk chicken, guava BBQ pork, coconut shrimp, fried plantains, and all your island favorites.

It’s the perfect fusion of boots, beats, and bold flavor.

Creating another food truck concept in addition to Urban Hotdog Collective with the goal of getting into large festivals and fairs that are saturated with hotdogs. Been going on a deep dive with the food and really enjoying the results. Stay tuned for our first event
