The first time I tried chicken marsala, I thought it was a complex dish that required tons of preparation. Little did I know, that it was going to be the easiest dish, ever! You probably have all the required ingredients for it and don’t even realize it.
The one thing I do recommend is using a nice marsala wine or any white wine that you normally drink. I find that cooking wine is a harsh on your palate and makes food acidic and bitter. The best wines are marsala, pinot grigio or a nice white zinfandel, but if not available, use any good drinking white wine.
I’ve used the traditional oregano in place of the fresh herbs in the past before but I find the thyme, rosemary and parsley make it taste complex and earthy, which I really enjoy. Enjoy this Creamy Chicken Marsala with some buttered noodles, rice pilaf or steamed ancient grains. Give it a try! It’s so good and SO easy to make, but most importantly, Happy Cookings!
Serves 6 loved ones
Chicken-
2.5 lbs, chicken
1 cup, flour for dredging
1 tbsp, parsley, chopped
1 tbsp, rosemary, chopped
1 tsp, thyme, chopped
1 tsp, kosher salt
1 tsp, black pepper
1 tbsp, olive oil
Sauce-
1 lb, crimini mushrooms, sliced
3 cloves, garlic, minced
2 tbsp, olive oil
1 tsp, salt
1 tsp, black pepper
1.5 cups, marsala or any white wine on hand
2 cups, heavy cream or half and half
1 tsp, parsley, chopped
