🍦🍫 "Chocolate-Dipped Mint Chocolate Chip Ice Cream Bars" 🍦🍫
Ingredients:
- 2 cups mint chocolate chip ice cream
- 1/2 cup dark chocolate chips
- 1 tbsp. coconut oil
- 1/4 cup mini chocolate chips
Directions:
1. Line a baking sheet with parchment paper and set aside.
2. Remove the ice cream from the freezer and let it soften slightly, about 5-10 minutes.
3. Using an ice cream scoop or a spoon, portion the ice cream into 6-8 equal-sized balls. Place them on the prepared baking sheet and freeze for about 30 minutes, or until firm.
4. In a double boiler or a microwave-safe bowl, melt the dark chocolate chips and coconut oil together until smooth.
5. Remove the ice cream balls from the freezer and dip each one into the melted dark chocolate, coating evenly. Place them back on the baking sheet.
6. Sprinkle the mini chocolate chips over the dark chocolate-coated ice cream bars while the chocolate is still wet.
7. Return the baking sheet to the freezer and freeze for at least 2 hours, or until the chocolate is set.
