Palate Project Direct Import Selection Vol. 02 🍶🚢

Izumiryu Yahiko - Kiwami
by Yahiko Brewing Company

🍶 Category: Futsushu
👅 Taste profile: Smooth & Dry
✍️ Tasting notes: Watermelon, Mineral, Clean, Multi-Temp

Born from sacred water. Brewed with the soft spring water flowing from Mt. Yahiko — long regarded as sacred by locals and deeply tied to the region’s history and spirituality. In Japanese, the brewery refers to it as “kami no mizu,” or “sacred brewing water.”

This unfined, single-pasteurized sake offers satisfying texture and depth while maintaining a clean, balanced finish.
Watermelon notes and soft minerality reveal themselves beautifully across different serving temperatures.

A quietly versatile bottle, especially alongside fresh fish dishes 🍴

Follow .sake for unexpected sake pairings and discover the style that fits your table. 🍶

One of the biggest misconceptions about sake is that it’s only for Japanese food.
In reality, sake might be one of the most versatile drinks at the table.

🍕 Pizza? Absolutely. Sake and cheese are an underrated dream pairing.
🌮 Tacos? Fruity, juicy sake can be incredible with spice and acidity.
🦞 Seafood? Of course. If you’d normally reach for white wine, there’s probably a sake that works just as well—if not better.
🥩 Steak? Rich, umami-forward sake can stand up to bold, savory flavors surprisingly well.
🥟 Chinese food? One of our favorite pairings. Powerful dishes deserve drinks with character.
🧀 Creamy dishes? Try nigori (cloudy sake). The texture alone can be magic.

The best part is that sake isn’t just one thing.
Some are dry and crisp. Some are fruity and aromatic. Some are rich with umami. Some are creamy and smooth.

That’s why we believe sake belongs wherever good food is being shared.

Comment “FRESH” for the preorder link.

The freshest sake in Japan — shipped cold to the U.S.

Most fresh sake like this never leaves Japan.

But with Fresh From Brewery,
we preorder sake while it’s still being brewed in Japan… then cold-ship it directly to the U.S. the moment it’s ready.

This is Yuki no Mayu from Naeba Brewing Company in Niigata prefecture.

Fresh, vibrant, slightly cloudy, and insanely drinkable.

Almost exactly how locals experience it in Japan.

Pre-order ends May 28.

Don’t miss it!

🚢 Palate Project Direct Import Selection Vol. 01 🍶

Torai Junmai Daiginjo Hanaomoi
by Rokka Brewing Company

Category: Junmai Daiginjo
Taste profile: Fruity & Elegant
Tasting notes: Apricot, Flower, Peach

Rokka Brewing Company utilizes “tuskihaze” koji to make this well-balanced junmai daiginjo. This type of koji takes more precision and careful handling to make, and fermentation is done slowly at low temperatures. You can truly taste the brewer’s expertise when you experience this sake’s harmonious blend of aroma, umami and acidity. To fully appreciate its flavor, pair it with simple dishes such as sashimi, prosciutto and fresh vegetables.

Hi, I’m Genki, founder of Tippsy and now Palate Project.
I wanted to share a bit more about why we’re making this change and what we’re working toward.
We believe great sake should be more accessible. Fresher, better, and at a more honest price.
We’re working to make that possible and to bring you closer to the genuine taste of sake.
We’re grateful to have you with us, and we hope you’ll stay with us.

Hi, I’m Genki, founder of Tippsy, and now Palate Project.

I wanted to share this message directly with you.
If you’ve had questions about our change, I hope this helps give some clarity on why we’re doing this and what stays the same.

The team is the same. I’m still here.
What hasn’t changed is why we’re here.
But our mission has grown.

We’re continuing this journey with you — and we’re grateful for your support.

If you have any thoughts or questions, I’d really love to hear from you.

Part 2 is coming soon. I hope you’ll continue to follow along.

Tippsy is becoming Palate Project.

First, thank you.
Over the past several years, Tippsy has grown alongside an incredible community of sake lovers like you. Everything we’ve built so far has been possible because of your support, and we wouldn’t be here without your trust.

While our name is changing, what matters most is not.
The same team, the same values, and the same commitment to sake remain.

So why Palate Project?
As our work has evolved, we’ve been thinking deeply about the future of sake in the United States — how it should be discovered, experienced, and appreciated on its own terms.
The name Palate Project reflects our commitment to delivering the genuine taste of sake in a way that feels more direct, more transparent, and closer to its origin.
Our goal is to make sake something you can explore with confidence — and enjoy more naturally in your everyday life.
This is more than a brand. It’s a project.

We’ll be sharing more about our mission and what we’re building next here.
If you’d like to follow along, we hope you’ll stay with us.
And as always, we’d really value your thoughts.
Your honest feedback means a great deal to us.

Note:
You may still see our page name as “Tippsy (now named Palate Project)” for a short time.
This is due to Facebook’s system update process, and will be updated to “Palate Project” soon.

Thank you, as always, for being part of this journey.
Take a sip. Join the project.
