Un-Curry

Un-Curry Indian cuisine is so much more than tandoori chicken, samosa, naan and ‘curry’. We offer new ways of looking at Indian cooking.

At Un-Curry, we serve up delicious regional Indian food you may not yet have heard of but won’t soon forget!

So upset to read the Washington Post piece about foods a certain writer dislikes and see that Indian food is equated with curry powder yet again. I’ve been trying to explain to Americans for two decades that there is no such thing as “curry” in India. That’s why I started Un-Curry, to teach people how to cook REAL Indian food because my country doesn’t have just one cuisine or one kind of food with one kind of smell or flavor. It has thousands of years of varied culinary traditions, spices and spice blends, flavorings, and ways of cooking. To lump them into a simplistic notion of food, thanks to a powder concocted by the British that no self-respecting Indian would cook with, and that doesn’t smell “Indian” at all, is ridiculous and ill informed. In this day and age, for the writer to say he does not like Indian food because he doesn’t like the smell of curry powder? Oh boy, he’s missing out. He’s never tasted the real thing, has he? Happy to cook for him any time.

Russell made three different variations on the theme of chicken noodle soup for the keto book, for which pasta, full of carbs, wouldn’t work. 1. A traditional soup with zucchini noodles or zoodles, 2. The one pictured, a Southwestern version with chipotle, cumin, oregano, and a garnish of avocado, radish, and cilantro, and 3. An Asian inspired one with miso and scallions and a drizzle of sesame oil. All the macros work - fats, proteins, and carbs - and the soups are easy-to-make, comforting and delicious. Keto eaters, look out for the America’s Test Kitchen keto cookbook early next year!

My best friend journo123 and her daughter are visiting from India, Dean is here from California and Sameera’s and my friend Mala lives here in Boston so I thought I’d cook Un-Curry favorites for a wee dinner party for us. Dean misses my cooking and Sameera sees pictures of it all the time but doesn’t get to taste and Mala and her family have never eaten my food. So with Dean as my sous chef, I cooked in Mala’s kitchen - to start, my guacamole with curry leaves, balti eggs, broccoli with garlic and cumin, Brussels sprouts with coriander and cumin seed powders, butternut squash raita, carrot-curry leaf slaw, and pan fried salmon with a garlic-turmeric-lemon marinade.

I’m working on the ATK keto book and testing is in full swing. Today, among other things, there was a 5-recipe keto chocolate chip cookie tasting. No wheat flour, no sugar! We had stevia sweetened chocolate chips, almond flour, coconut flour, and some interesting results!

Funny thing happened today. I went to the office printer to get my keto print outs and there were some pages there. I almost picked them up because they were karanji recipes! And then I realized they weren’t mine, ATK Kids team was testing karanjis for their upcoming book. An odd case of two worlds colliding! A few hours later, a test cook brought me some karanjis to taste. They were good! My grandma would have been happy. 💕

When a writer friend invites you to dinner in the town you’ve just moved to, and makes a lovely Ottolenghi mint rice with lamb and an olive-walnut-pomegranate salsa, and a sour cherry pie with cherries from her garden and a crust you love, what could make this food writer happier?
