Save this for your next special dinner. This coffee-glazed venison rack is rich, bold, and surprisingly simple.

Ingredients
• 1 First Light venison rack
• 1/4 cup strong coffee (espresso or very strong brewed)
• 2 tbsp maple syrup
• 2 tsp red wine or balsamic vinegar
• 2 tbsp bourbon
• 1 tsp soy sauce
• 2 tsp brown sugar
• Small k**b of butter
• Salt + pepper

Method
1.Take venison out 30–45 mins before cooking. Preheat oven to 395°F.
2. In a small pan, simmer coffee, maple syrup, vinegar, bourbon, soy sauce, and sugar for 5–8 mins until slightly thickened. Remove from heat, whisk in butter, keep warm.
3. Pat venison dry, season well with salt and pepper.
4. Sear in a hot pan with oil, ~1–1.5 mins per side (including ends) until browned.
5. Transfer to oven and roast 12–18 mins, until internal temp reaches 122–125°F (medium-rare). Brush with glaze in the last few minutes.
6. Rest the meat, then brush again with glaze.

Slice into chops and serve with your favorite sides and extra glaze on top.
