White Chocolate Raspberry Popcorn! A tangy + sweet spin on a classic snack 🍿 We are big popcorn lovers over here and I’m always trying to come up with new flavor combinations. This one is a winner for sure!

You can use micowave popcorn or stove top like I did here. In a large pot over medium heat I add 1/4 cup of oil and 2 popcorn kernels. Once the popcorn kernels have popped I know the oil is hot enough for the rest of the kernels. I add 1/2 a cup of popcorn kernels. Cover the pot with the lid and let the popcorn pop. Shake the pot over the heat every 1-2 minutes to prevent burning. Once the popcorn is popped, pour into a large tub that had a lid. Melt 1/2 a cup of white chocolate chips over a double boiler or, in the microwave for 30 second intervals stirring in between each time until melted. Crush 1 cup of freeze dried raspberries. Drizzle the melted white chocolate over the popcorn and sprinkle the crushed freeze dried raspberries. Cover the popcorn with the lid and shake until all the popcorn is coated. I also add a sprinkle of salt and extra freeze dried raspberries!

Maple Honey Vanilla Granola 🍯 It’s so easy to make your own granola at home and way more cost effective vs buying from the store. I hope you join me in making a weekly batch to eat on its own or stacked between layers of yogurt! This flavor below is my absolute favorite!

Maple Honey Vanilla Granola - in a small saucepan melt together 1/4 cup honey, 1/4 cup maple syrup, 1 tsp vanilla extract and this is optional, 1 vanilla bean pod. (Slice the vanilla bean pod down the center and use the knife to scrape the black vanilla beans out of the pod. Add the vanilla beans into the honey mixture along with the vanilla bean pod.)
In a large bowl add 1 1/2 cups oats, 2 tbs chia seeds, 1/2 cup pumpkin seeds, 1/2 cup pecans, 1/2 cup dried cranberries, 1 tbs cinnamon.
Drizzle the honey mixture over the oat mixture (remove the vanilla bean pod) and stir until everything is coated.
Layer on a baking sheet lined with parchment paper. Sprinkle with flaky sea salt. Bake at 300 degrees for 30 minutes. Let the granola fully cool before breaking it apart. Store in an air tight container for up to 1 week.

Send this Honey Vanilla Coffee to someone you want to have a coffee date with! 🍯🫶🏽 Make this Honey Vanilla Syrup to flavor your coffee + tea! It’s so simple and delicious in any beverage. Over low heat mix together 1 cup water, 1 cup honey, 1 tsp vanilla extract and if you have it, 1 vanilla bean pod. Scrape the vanilla beans from the pod and toss them in along with the pod. Once the honey melts, pour it into a container with a spout and let it cool. Once cooled pour the honey syrup into a storage bottle and keep in the refrigerator for up to two weeks. Give it a slight shake before adding it to your coffees, teas and cold foam!

Send this Rocky Road Protein Ice Cream to a friend! I’m obsessed with my Ninja Creami and this rocky road flavor is one of my favorites for sure 🤩

I mix together 1 cup of whole milk, 1/2 cup Greek yogurt, 1 scoop chocolate protein powder and 1 tablespoon of chocolate syrup. Freeze overnight and then the Ninja Creami turns it into the best protein ice cream! I add toasted chopped almonds and mini marshmallows as mix ins. This thing is magic 😋😮

Iconic Iced Oatmeal Cookies
For the cookies blend together; 3 cups rolled oats, 1 1/2 cups AP flour, 1/2 tsp baking powder, 1/2 tsp baking soda, 1 tsp corn starch and 1/2 tsp salt.
In a large bowl mix together 1 cup softened butter with 1 cup brown sugar and 3/4 cup white sugar. Whisk in 2 room temperature eggs and 1 tsp vanilla.
Slowly fold in the oat mixture to the sugar mixture until a cookie dough forms.
Scoop onto a baking sheet and bake at 350 degrees for 10-12 minutes. Once a golden color forms around the cookie edge you know they are ready!
Let the cookies completely cool on the baking sheet.

For the icing whisk together; 2 cups powdered sugar, 1/4 cup heavy cream, 2 tbs milk and 1 tsp vanilla.

Dunk the tops of the cooled cookies into the icing and shake off the extra.
Let the icing fully set. It takes about 20-30 minutes for the icing to harden.

Store in an air tight container for up to a week.

Insane OR Brilliant?! 😮🍪🫶🏽✨

Chocolate Bottom Cookies is a unique take on a classic chocolate chip cookie! To be honest, I do half the batch with chocolate and keep the rest without. The cookies on their own are soft, chewy delights. The chocolate bottom obviously takes them to the next level!

For these I cream together 1 cup unsalted room temperature butter with 3/4 cup EACH white + brown sugar. I cream these together for about 5 minutes until the mixture gets fluffy.
Then I mix in 2 eggs at room temperature with a hearty teaspoon of vanilla extract.
Lastly I add 2 1/4 cups all purpose flour, 1/2 teaspoon salt and 1 teaspoon baking soda. Once I add the flour I mix just until a cookie batter forms.
Use a 2 oz cookie scoop and drop the cookies onto a baking sheet.
Bake at 375 degrees for 9-10 minutes.
Let cool slightly before removing them from the baking sheet and letting them cool completely on a cooling rack.
For the chocolate bottoms I melt milk chocolate and spoon 1 tablespoon onto parchment paper. I gently press a cookie down on the melted chocolate. Repeat the process and let the cookies set in the refrigerator until the chocolate firms up.

Homemade Toaster Waffles - In a large bowl whisk together 2 cups of flour, 2 tablespoons sugar, 4 teaspoons baking powder, 1 teaspoon salt, 1 1/2 cups milk, 1 teaspoon vanilla, 1 egg and 1/3 cup melted butter. Cook the batter on your waffle iron of choice and enjoy!
