Mediterranean Spaghetti Pasta Salad
Ingredients:
1 lb (450 g) spaghetti, cooked and cooled
1 cup cherry tomatoes, halved
2 cucumbers, diced
1 green bell pepper, diced
1 red bell pepper, diced
½ red onion, diced
1 cup black olives, sliced
1 cup mozzarella cheese cubes
2 tbsp fresh parsley, chopped
Dressing:
½ cup olive oil
¼ cup red wine vinegar
1 tbsp lemon juice
1 tsp Italian seasoning
1 tsp garlic powder
Salt and black pepper to taste
Instructions:
1. Cook spaghetti according to package directions. Drain and rinse with cold water.
2. In a large bowl, combine spaghetti, tomatoes, cucumbers, peppers, onion, olives, and mozzarella.
3. In a separate bowl, whisk together olive oil, vinegar, lemon juice, Italian seasoning, garlic powder, salt, and pepper.
4. Pour the dressing over the salad and toss well to coat.
5. Refrigerate for at least 1 hour before serving.
6. Garnish with fresh parsley and serve chilled.
Serves:
8–10 people as a side dish
4–6 people as a main dish
