"Cabbage Roll Soup

Ingredients 🛒:

1 lb ground beef
1 onion, chopped
3 cloves garlic, minced
4 cups green cabbage, chopped
2 carrots, diced
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
6 cups beef broth
1/2 cup uncooked white rice
1 tsp paprika
1 tsp dried thyme
1 bay leaf
Salt and pepper, to taste
Fresh parsley, chopped for garnish

Directions 👩‍🍳:

Cook the Ground Beef: In a large pot or Dutch oven, brown the ground beef over medium-high heat, breaking it up as it cooks. Drain excess fat.
Sauté the Vegetables: Add the chopped onion, garlic, and carrots to the pot with the beef. Cook for 3-4 minutes until the vegetables are softened.
Add Cabbage and Tomatoes: Stir in the chopped cabbage, diced tomatoes, tomato sauce, paprika, thyme, and bay leaf. Season with salt and pepper.
Add Broth and Rice: Pour in the beef broth and stir in the uncooked rice. Bring the soup to a simmer, cover, and cook for 25-30 minutes, stirring occasionally, until the rice and cabbage are tender.
Adjust Seasoning: Remove the bay leaf and taste the soup. Adjust seasoning with more salt and pepper if needed.

"Garlic Parmesan Bacon Cheeseburger Bombs 🥓🧀

Ingredients 🛒:

1 lb ground beef
4 slices bacon, cooked and crumbled
4 slices provolone or mozzarella cheese
4 burger buns
2 tbsp unsalted butter, melted
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
1 tsp garlic powder
Salt and pepper, to taste
Freshly ground black pepper, for garnish

Directions 👩‍🍳:

Prepare the Beef Patties: Season the ground beef with salt, pepper, and garlic powder. Form the beef into 4 equal patties.

Cook the Patties: In a large skillet, cook the patties over medium heat for 4-5 minutes on each side, or until cooked to your desired doneness. Top each patty with a slice of cheese in the last minute of cooking, allowing it to melt. Remove from heat and let the patties rest.

Make the Garlic Parmesan Butter: In a small bowl, combine the melted butter, minced garlic, and Parmesan cheese.

12 oz rigatoni pasta
1 lb Italian sausage (sweet or spicy), removed from casing
1 zucchini, sliced into half moons
1 red bell pepper, diced
1 yellow bell pepper, diced
1 pint cherry tomatoes
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1/4 cup fresh basil, chopped
2 tbsp olive oil
Salt and pepper, to taste
Fresh Parmesan cheese, grated for garnish

Directions 👩‍🍳:

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the rigatoni according to package instructions until al dente. Drain and set aside.

Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the remaining olive oil and sauté the garlic for about 30 seconds until fragrant. Add the zucchini, bell peppers, and cherry tomatoes. Cook for 5-7 minutes, until the vegetables are tender and the tomatoes begin to burst.
