INGREDIENTS
1/2 cup all-purpose flour
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp salt
1/4 cup brown sugar
1 large egg
1/4 cup vegetable oil
1/2 tsp vanilla extract
1/2 cup grated carrot
2 tbsp crushed pineapple (drained)
2 tbsp chopped pecans

DIRECTIONS
Preheat oven to 350°F
Grease 2 mini ramekins or one 4-inch cake pan
Mix dry ingredients in one bowl
Whisk sugar, egg, oil, and vanilla in another
Combine wet and dry, then fold in carrot, pineapple, pecans
Pour into pans and bake 22–25 minutes
Cool completely, then frost

STEAK AND CALAMARI WITH GARLIC CREAM SAUCE

INGREDIENTS
2 ribeye or sirloin steaks
250g cleaned calamari rings
1 tablespoon olive oil
1 tablespoon butter
3 garlic cloves, minced
½ teaspoon black pepper
1 tablespoon lemon juice
½ cup all-purpose flour
Salt to taste
Chopped parsley
Oil for shallow frying

DIRECTIONS
Pat steaks dry and season with salt and pepper
Toss calamari with lemon juice and a pinch of salt
Dredge calamari in flour, shake off excess
Shallow-fry calamari until golden, drain on paper towels
Wipe pan, heat olive oil and butter
Sear steaks 3–4 minutes per side, add garlic at the end
Let steak rest while you simmer garlic cream sauce
Plate steak, top with calamari, drizzle sauce, and garnish with parsley

INGREDIENTS
12 oz spaghetti
1 jar (24 oz) marinara sauce
1 pound ground beef
1 small onion, diced
1 teaspoon garlic powder
1½ cups shredded mozzarella
½ cup grated parmesan
Salt and pepper, to taste

Cook spaghetti until al dente, drain
Brown beef with onion, season with garlic, salt, and pepper
Mix beef with marinara and cooked spaghetti
Layer into a greased casserole dish
Top with mozzarella and parmesan

1 pound ground beef
½ cup ketchup
2 tablespoons tomato paste
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper, to taste
4 thick slices Texas toast, buttered
Cheddar cheese slices (optional)
Pickles, for serving

DIRECTIONS
Brown the beef in a skillet and drain fat
Add ketchup, tomato paste, mustard, Worcestershire, and spices
Simmer until thick and saucy, about 10 minutes
Toast Texas toast slices in a skillet until golden
Scoop sloppy joe mixture onto a slice, top with cheese if using, and sandwich with another slice
Serve hot with pickles

1½ cups shredded Mexican cheese blend

½ cup sour cream
1 small can diced green chiles
Salt and pepper, to taste
Fresh cilantro or parsley for garnish

1½ cups shredded sharp cheddar
Salt and pepper, to taste

½ teaspoon cinnamon
¼ teaspoon nutmeg
1 tablespoon butter, melted
