🥕 When the carrot cake is this cute, you don’t need a reason

MINI CARROT CAKE

INGREDIENTS
1/2 cup all-purpose flour
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp salt
1/4 cup brown sugar
1 large egg
1/4 cup vegetable oil
1/2 tsp vanilla extract
1/2 cup grated carrot
2 tbsp crushed pineapple (drained)
2 tbsp chopped pecans

DIRECTIONS
Preheat oven to 350°F
Grease 2 mini ramekins or one 4-inch cake pan
Mix dry ingredients in one bowl
Whisk sugar, egg, oil, and vanilla in another
Combine wet and dry, then fold in carrot, pineapple, pecans
Pour into pans and bake 22–25 minutes
Cool completely, then frost
