Keto Meatballs (Easy Low Carb Recipe)
Juicy, flavorful low carb meatballs with just 2.5g net carbs per serving. Perfect for dinner or a quick appetizer.

Ingredients
ยท ยผ cup blanched almond flour (or sunflower seed meal for nut-free)
ยท ยผ cup grated Parmesan cheese (or more almond flour for dairy-free)
ยท 1 tbsp Italian seasoning
ยท ยพ tsp sea salt
ยท ยฝ tsp black pepper
ยท ยผ cup low carb milk (almond milk, coconut milk beverage, or heavy cream)
ยท 3 tbsp onion, grated
ยท 1 large egg
ยท 3 cloves garlic, minced
ยท 2 tbsp fresh parsley, chopped
ยท 1 lb ground beef
ยท ยพ cup marinara sauce
Instructions
1. Preheat oven to 425ยฐF (218ยฐC). Line a baking sheet with parchment paper or foil (grease if using foil).
2. In a large bowl, stir together almond flour, Parmesan, Italian seasoning, salt, and pepper.
3. Whisk in milk, grated onion, egg, garlic, and parsley. Let mixture sit for a couple of minutes.
4. Mix in ground beef using your hands, until just incorporated. Do not over-mix.
5. Form mixture into 1-inch (2.5 cm) balls and place on lined baking sheet. Use a gentle touch and don't pack too tightly.
6. Baking Instructions: Bake for 10-12 minutes until barely done (155-160ยฐF). For more golden color, broil for 1-3 minutes. Drain excess liquid. Top with marinara sauce, return to oven, and bake for 3-5 minutes until sauce is hot and meatballs are cooked through.
7. Stovetop Instructions: Heat 1-2 tbsp olive oil in a large skillet over medium heat. Fry meatballs in a single layer for 2 minutes per side until golden brown. Pour marinara sauce over, cover, and simmer for about 10 minutes until cooked through.
