Taco Chicken Cottage Cheese Bowls 🌮🔥
Ingredients (for 5 people)
3 cups low-fat cottage cheese (blend smooth)
3 cups cooked shredded chicken
1 1/2 cups salsa
2 1/2 tsp taco seasoning
1 1/4 cups shredded cheddar
2 cups diced bell pepper
1 1/2 cups canned corn (drained)
1 1/2 cups black beans (drained)
5 tbsp Greek yogurt (optional topping)
2 avocados (optional topping)
Instructions
Mix blended cottage cheese + salsa + taco seasoning.
Fold in chicken, peppers, corn, and beans.
Divide into 5 oven-safe bowls, top with cheddar.
Bake 12–15 min at 190°C / 375°F (or microwave 1–2 min) until bubbly.
