Sauerkraut Fest 2021! We processed about 40 pounds of cabbages, added Celtic sea salt, juniper berries, caraway seeds, dill and watered down buttermilk to the crock. Should be ready just before 2022!

Warm German Potato Salad with Cabbage and Sausages. Perfect for a cozy Saturday night dinner after an afternoon of Sauerkraut making. We went to the last farmers market of the season in Corvallis and picked up some apples which went well with some of the extra cabbage. I added fennel, onion, carrot, celery, stone ground mustard, vinegar and some andouille sausage. Amazing.

Cover crops do a lot! Prevent soil compaction, reduce soil erosion, fix nitrogen, attract beneficial insects, prevent invasive weeds, increase soil microbial content, and are really nice to look at!
