So I’m still trying to figure out how in the hell you hit a boat 23 miles from land? I think the Captain of the other boat should lose his license for almost killing 7 people on the boat he hit. And what kind of bu****it excuse is that he didn’t see the boat on the radar????? That’s what happens when you have these guys that claim they have the sea time for a captain license and it shows. They don’t! I’m up for a debate.. what do y’all think?

And saw him stopped cuz boat slid back 3’!
(Said he was going to just hit brakes to slide it back into place!
I went straight to dealer and complained!

Creamy Spinach Stuffed Cajun Chicken with Garlic Shrimp

Ingredients

2 large boneless, skinless chicken breasts

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

2 tbsp butter

2 tsp Cajun seasoning

1 tsp smoked paprika

1 tsp garlic powder

Salt and black pepper, to taste

Stuffing

4 oz cream cheese, softened

1 cup chopped fresh spinach

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 tsp Italian seasoning

Garlic Cream Sauce

2 tbsp butter

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 tsp Cajun seasoning

1 tbsp chopped fresh parsley

Optional Side

Roasted asparagus

Instructions

1. Butterfly each chicken breast to create a pocket without cutting all the way through.

2. In a bowl, combine the cream cheese, spinach, mozzarella, Parmesan, garlic, and Italian seasoning. Stuff each chicken breast and secure with toothpicks if needed.

3. Season the chicken and shrimp with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper.

4. Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear the stuffed chicken for 4–5 minutes per side, then reduce the heat, cover, and cook for 8–10 minutes until the chicken reaches an internal temperature of 165°F (74°C). Remove and keep warm.

5. In the same skillet, melt the remaining tablespoon of butter and cook the shrimp for 1–2 minutes per side until pink and lightly browned. Remove and set aside.

6. Melt 2 tablespoons butter in the skillet, sauté the garlic for 30 seconds, then stir in the heavy cream, Parmesan, and Cajun seasoning. Simmer until the sauce thickens slightly.

7. Return the shrimp to the sauce and spoon some over the chicken.

8. Serve the stuffed Cajun chicken topped with the garlic shrimp and cream sauce, garnished with chopped parsley alongside roasted asparagus if desired.

Ingredients

For the Fries

1½ lbs frozen French fries

2 cups warm cheddar cheese sauce

1 cup shredded Monterey Jack cheese

For the Steak

1 lb ribeye or sirloin steak, thinly sliced

1 tbsp olive oil

1 tbsp butter

1 tsp Cajun seasoning

½ tsp garlic powder

Salt and black pepper, to taste

For the Shrimp

1 lb large shrimp, peeled and deveined

1 tbsp butter

2 cloves garlic, minced

1 tsp Cajun seasoning

½ tsp paprika

½ tsp Italian seasoning

Toppings

4 slices bacon, cooked and chopped

Sour cream

Chopped fresh parsley

Fresh cracked black pepper

Instructions

1. Bake or air-fry the French fries until crispy and golden. Arrange them in a serving dish and sprinkle with the Monterey Jack cheese.
