Laconiko (Olive Oil)

Laconiko olive oil is an extra-virgin olive oil born in the southeastern most tip of the Peloponnese, Greece, in the region of Laconia. It is produced by two brothers, Dino and Diamantis Pierrakos, 4th generation olive oil producers.

The sandy soils where the 5,000 Koroneiki varietal olive trees are grown amongst citrus fruit trees are nature’s best filtration system, eliminating impurities that may be present and assuring olives that are of extremely highest quality.

Laconiko olives are always harvested early, starting in October. The young green unripe fruit are picked, placed in bins rather than bags to protect its quality, and the oil is extracted at a low temperature (often called “cold pressing”) less than 4 hours after picking. The careful harvest and transportation, immediately followed by an unusually prompt oil production, make the extra virgin olive oil greener and higher in antioxidants, maximizing the high polyphenol content—so that it offers more health benefits and flavor. The oil is immediately stored at a constant 58 degrees Fahrenheit all year long, which further prolongs its freshness and longer shelf life.

Laconiko oil comes with aromas of fresh green olives, green grass, banana, and notes of almond. Flavors of abundant fruitiness, green grass, sweetness, bitterness, pungency, and notes of artichoke, with exceptional harmony, high complexity, and high persistence.

The Meyer Lemon EVOO, made using high phenolic Koroneiki EVOO will "make you feel like you picked and squeezed fresh lemons on your dish". It can be used for lemon bread pudding, chicken, mix in any type of hummus, salmon, and drizzle over greens!

While everyone talks about or looks forward to the glory of the olive harvest every year at the estate, maintaining the olive trees and the estate is a year long process. Pruning the olive trees is typically done in late spring or early summer. This is also the best time to thin out any crowded branches and allow as much light as possible into the center of the tree.

Olive trees may be drought tolerant, but they need to be kept well-watered, as dry spells during early spring can affect flowering and fruiting.

Brussels sprouts are tasty and nutritious! Bought these organic ones on sale and cooked them the day I got them. Such an easy recipe: ANCIENT ORGANICS GHEE + Laconiko dark balsamic + Himalayan salt and black pepper. Mixed everything really well and put in oven at 400F for half an hour. The end result is crispy and delicious!

Sesame Udon with Dandelion Greens

Ingredients
• 1 bunch dandelion greens
• 2 tablespoons Laconiko extra-virgin olive oil
• 2 tablespoons toasted sesame oil
• 1 (8-ounce) package all-buckwheat soba noodles
• 4 garlic cloves, smashed
• 1 (1-inch) piece ginger, peeled and thinly sliced (or a sprinkle of powdered ginger in a pinch)
• 1 small bunch green onions, white and green parts separated, cut into 2-inch matchsticks
• ⅓ cup soy sauce or tamari
• 3 tablespoons local honey
• 1 teaspoon black pepper
• Pinch of red-pepper flakes
• 1 lime, for serving
• Crushed Belmont honey-roasted peanuts, for serving
• Grated daikon radish, for serving (use the radishes in your box this week!)
• Fried eggs, for serving (if desired)

Directions
1. Bring a small pot of water to a boil for the soba noodles.
2. Roughly chop the dandelion greens, including the stems. Heat a cast-iron skillet over medium-high heat. Add the olive oil and 1 tablespoon of the sesame oil.
3. Add garlic, ginger and whites of the onions to the skillet, along with the remaining tablespoon sesame oil, reduce the heat to medium, and cook until the oil is fragrant, stirring constantly, about 1 minute.
4. Add the dandelion green stems and cook gently for a few minutes until slightly softened. Follow with the dandelion leaves and cook until tender.
5. Meanwhile, cook the soba in boiling water for 5 to 8 minutes until just al dente, stirring frequently. Drain and rinse in cold water until the noodles no longer feel sticky.
6. Add cooked and drained soba noodles to the pan, along with soy sauce, honey, black pepper, red pepper and reserved green onions. Toss together until the noodles are coated.
7. Remove from the heat and serve warm or with lime, grated daikon, peanuts, and a fried egg.
Southern Italian Pasta with Dandelion Greens

Ingredients
• 6 ounces bucatini or Scratch Pasta Co. Pappardelle
• 1 bunch dandelion greens, washed
• 1 garlic clove, thinly sliced
• 1/4 cup Laconiko extra-virgin olive oil
• 1 eggs, lightly beaten
• Salt
• 1/4 cup toasted hazelnuts
• 1/4 cup grated Meadow Creek Dairy Appalachian cheese
• 2 tablespoons coarse fresh bread crumbs

Directions
1. Bring a large pot of water to a boil with 2 tablespoons kosher salt.
2. Roughly chop the dandelion greens, including the stems.
3. Heat the oil and garlic in a sauté pan until the garlic becomes fragrant. Toss in the dandelion stems and cook for a few minutes. Add the greens and cook until they are wilted and softened, about 5 minutes. *Partially covering the pan can help them to soften if they're quite tough.
4. Meanwhile, cook the pasta until al dente. Just before draining, scoop out 1/3 cup of the pasta water and whisk into the eggs.
5. Add the drained pasta to the sauté pan off the heat; drizzle in the eggs and toss everything together. Taste for seasoning and add more salt, if needed.
6. Stir the grated Appalachian cheese and bread crumbs together and sprinkle with the hazelnuts over the pasta.

Olive when Dino and Diamontis from Laconiko (Olive Oil) go to Greece for the harvest. It is so amazing to see where your olive oil comes from & how it’s made.
I made Shepherd’s Pie and it hit the spot! I sautéed an onion in ghee, then added grated carrots and grass-fed ground beef and frozen peas; then I added a splash of coconut aminos and Worcestershire sauce and a dash of salt and pepper. While I let that simmer, I boiled some potatoes in chicken broth on the stovetop and I baked cauliflower with ghee in the oven. Once those were cooked, I used an immersion blender to mash the potatoes and cauliflower and added some salted butter (because butter makes everything better 🧈🤤!) Everything was now ready to be assembled in the casserole — the ground beef mixture on the bottom and the potato-cauli mash on the top. I broiled in the oven on high for a couple of minutes, and viola! I served it with a side salad with organic feta and Laconiko Tuscan Herb olive oil. So good 😋
