It's taken me a lot of trial and error but I finally mastered that sweet and spicy Carolina Vinegar Sauce. Pork shoulder smoked, shredded, chopped and mixed with just the right amount of carolina vinegar sauce makes for some good eats!

Vacation time is fast approaching. Week of house work. Time to fire up old faithful and get my smoke on. Thinking about starting with smoked corned beef brisket. And because I have yet to find any restaurant locally who serves a good brisket...gonna just have to whip up a Texas brisket on my own.
