Garlic scape season is nearing its end, but we’d like to give folks a few ideas about how to use them!

We grill, sautee, or roast them, just as we would asparagus. We'll also chop them up and sprinkle them on salads, baked potatoes, egg dishes, etc — but our favorite way of preparing them is garlic scape pesto.

Enjoy it tossed with pasta, served as a veggie dip or salad dressing, or spread over chicken and fish!

Garlic Scape Pesto
— 1 cup chopped garlic scapes
— 1/2 cup packed basil leaves
— 1/3 cup pine nuts
— 1/3 cup parmesan cheese
— 1/3 cup olive oil
— 2 tablespoons lemon juice
— 1/2 teaspoon salt
— blend until smooth
