Cajuns don’t believe in wasting perfectly good scraps.

We season them, batter them, fry them—and suddenly everybody wants the “leftovers.”

Introducing Chicken Cracklings—the tasty little trimmings from our fresh chicken breasts, coated in our house batter and fried golden and crispy.

Call them scraps if you want.

We call them DELICIOUS!

Caveat...these are the actual scraps from our chicken we trim, so....when they are gone for the day, they are gone!

And, DANG, they are GOOD!

And right now, our future is looking pretty pink, too!

We are incredibly grateful to share that Donuts on Main has received preliminary approval to use an available CRA grant through Main Street Marianna

For the past several years, I have participated in city- and county-sponsored events, attended meetings and workshops, asked questions, and—most importantly—listened.

This began long before a brick-and-mortar Cajun Corner was ever imagined.

Along the way, I met people who have an almost fierce devotion to seeing Marianna and Jackson County grow and thrive.

I learned that my “What if we opened a food truck?” could become “What’s next to open a food truck?”

One conversation led to another. Ideas began to take shape.
Honestly, participating in the events, meetings, and workshops was like going to college for small-business ownership and community development.

Completing and submitting this grant application was possible because I had learned that these resources existed—and gained a better understanding of how to use them responsibly.

Grant funding is allocated for specific improvements, and every single penny must be documented. As it should be.

These funds cannot be used to purchase our donut-making equipment or cover every expense involved in opening, but they will help with approved improvements to the building.

We met with Main Street Marianna yesterday and received preliminary approval. There are still steps to complete and documentation to provide, but this assistance is truly a Godsend as we begin this journey.

We are grateful for the knowledge shared, the relationships built, and the people who continue working to help small businesses become part of Marianna’s future.

One meeting.
One conversation.
One question.

One step of faith at a time.

From “What if?” to “What’s next?”

A few “this is where we're starting” pictures.

It's not pretty yet.

There's a LOT to do.

And right now, to be honest, there's a lot we can't do.

We're waiting on several things before we can take some of the next steps.

So…we wait.

Not always patiently.

But slowly and surely, we're taking one step in faith at a time.

Doing what we can when we can.
Figuring things out as we go.

Trusting the process.
Trusting God's timing.

And still dreaming about the day we unlock these doors and welcome you inside.

Right now you may see an old building that needs some love.

We see Donuts on Main.

And someday, we have a feeling we're going to LOVE looking back at these pictures and remembering exactly where we started.

Here we go.

One step at a time.

Just imagine… one day: maybe soon, maybe not-so-soon: Donuts on Main will be open right here on this corner!

And since we promised to share the whole journey with you, that includes the exciting parts AND the parts where we ask a whole lot of questions.

Last Tuesday, we spoke to the City about the possibility of turning the vacant lot beside us into public parking rather than a park/pedestrian plaza.

It appears the grant funding may not allow that change. If that's the case, we understand.

Grants come with rules, and sometimes you simply have to roll with them.

But we still had questions.

The City of Marianna is diligently researching those questions for us, and we appreciate that.

The property is part of the Rebuild Florida Hometown Revitalization Program, Community Development Block Grant–Disaster Recovery (CDBG-DR), FloridaCommerce Agreement M0047, which expires in September 2027.

We've asked:

• How much of the $9,243,842 Agreement M0047 is currently encumbered or allocated specifically to the public facility improvements at 4436 Lafayette Street?

• How much has actually been spent on this particular project to date?

• What grant restrictions prevent the City from reconsidering the final use of the property?

• And if the final use must remain as originally planned, what is the current timeline for completing the project?

We've also been doing a little homework of our own.

In 2023, the City budgeted $300,000 from the grant for demolition of the Pelt building. The actual demolition cost came in considerably under that amount at $189,600.

Then, in June 2024, the City considered and accepted broader Downtown Architectural Style and Design Guidelines that included a proposed pedestrian plaza at Cristo's Corner.

And this is where it became particularly interesting to us as the new occupants of the adjacent restaurant space.

Page 13 of those guidelines lists an “Outdoor Dining Area for Adjacent Restaurant.”

Pages 22 and 24 specifically say:

“Covered outdoor seating for adjacent restaurant.”

And the concept drawings actually designate an area along our building as:

“Covered outdoor seating for adjacent restaurant.”

Obviously, the restaurant occupying our location when those plans were developed and approved is no longer here. They have since relocated to Dothan.

And now… we're here.

The circumstances surrounding this corner have changed significantly since these plans were created.

So we think it's completely reasonable to ask:

What does the plan for Cristo's Corner look like now?

If the grant requires the pedestrian plaza to remain, then let's understand that and figure out how our little corner fits into it.

If there is flexibility because circumstances have changed, we'd love for that conversation to happen too.

Either way, we're going to keep researching, learning, and sharing what we learn with you.

Because someday we're going to look back at this video and say:

“Remember when it was just an empty building, an empty lot, a dream…and a whole lot of paperwork?” 😂

Well… there are a LOT of y’all here and we are SO grateful.

Donuts on Main gained followers faster than we ever imagined, and we realized something.

A whole bunch of you may not know our other little adventure — Cajun Corner

Before the donuts, there was Cajun food.
And burgers.
And gumbo.
And étouffée.
And beignets.

And a whole lot of learning what it takes to run a small business.

Cajun Corner is our little Louisiana-inspired restaurant right here in Marianna, serving up housemade food with a whole lot of personality.

So if you found us because of Donuts on Main, we’d love for you to hop over and follow Cajun Corner, too.

And to our Cajun Krewe who followed us over here from day one — thank you.

This is why I'm so passionate about revitalizing downtown Marianna.

Yesterday, we had a wonderful group from the Class of '59 at Cajun Corner.
Listening to them talk was like stepping back in time.

They shared stories of riding their bikes downtown, walking from store to store, buying candy, shopping with friends, and spending Saturdays on Lafayette Street.

Downtown wasn't just where you bought things, it was where memories were made.

My mom, Barbara Hatton Herring was part of those conversations. So was Ann Marie's dad, Charlie Everitt , along with several others who lived those memories.

You could hear the joy in their voices as they remembered what downtown once was.

Then today, I found myself standing outside Donuts on Main, discovering an original Mesker Bros. architectural stamp almost worn away.

More than a century ago, these architectural pieces were shipped by rail to small towns to create beautiful storefronts. These are highly sought after by architectural historians.

It reminded me that these buildings aren't just bricks and mortar, they have stories to tell.

My hope is that years from now, another generation will sit around a table telling stories about walking downtown for donuts, meeting friends, supporting local businesses, and making memories of their own.

Together, we can help write the next chapter of Marianna.
