Chicken Florentine...let's eat

3 to 4 Chicken breast diced small
Italian seasoning
Diced onion
Heavy cream
Cornstarch
Chicken stock
Spinach
Olive oil

On medium heat add olive oil to the pan, add diced chicken and Italian seasoning and cook until cooked thoroughly. Add about half a diced onion or 3 to 4 diced shallots. Cook until translucent. Add 1 cup chicken stock and 1 cup heavy cream or half and half. Take 1 table spoon corn starch and a tablespoon of water to make a small slurry to help thicken the sauce. Add to the pan and stir. Add 2 cups raw spinach, I chop the ends off of fresh spinach and give it a rough chop before tossing into the pan. Cook until wilted, should only take a few minutes.

Meal suggestions:
Serve over pasta, rice, egg noodles

Or

Get some pre made pizza dough, the kind in the bag not the pre formed and pre cooked kind.

Make stromboli, calzones, pizzas
Heat the oven 450 475
Stretch your dough Add the filling and a combination of parmesan cheese and mozzarella cheese on top and bake for 15 to 20 minutes or until crust is golden brown. Don't forget to brush with egg wash or olive oil to give the crust some shine..

I did 450 for 17 minutes

Happy 4th of July! Decided I would bake some cookies, not just any cookies though, cake mix cookies! Super easy and a crowd pleaser!

Any box mix of your choice. Today I chose carrot cake, red velvet cake, and strawberry cake.

1/2 cup vegetable oil
2 eggs

Oven to 350

I use a cookies scoop to try and get even sized cookies. Bake for 9 to 11 minutes...I go towards the 9 minute mark with these. Make sure to be using the middle rack of your oven.

Frost the insides to make sandwiches, I use cream cheese frosting.

Beef stock
Olive oil
Black pepper

Place in a pot with olive oil and black pepper, cook down until translucent, add about a cup of beef stock and cover to sweet down the onions, as they get reduced add another cup of stock, continuing to reduce. This process takes about 45 minutes to an hour. Cook on medium heat.
Set aside on low

Thin slice chuck roast to bite sized pieces

In a large pan add olive oil and mushrooms saute until soft on medium high heat.

Add sliced meat and badia complete, garlic powder and black pepper

Continue to saute until cooked to your liking, could be medium to well done, you choose.

To make the cheese sauce

1 cup heavy cream and 2 cups shredded cheese, your choice

Heat cream in a sauce pan, once warm, add cheese continuously stirring until cheese is melted.

Build your sandwich

I love NY Kaiser rolls

Ham steak puffed pastry

This was a hit in my house, hopefully you try this out with your family

8 once shredded Swiss Cheese
1/2 red onion
Small container pre sliced mushrooms
Dijon mustard
2 T minced garlic
1 t thyme
2 to 3 ham steaks or picnic steaks diced
Puff pastry
1 egg

Saute ham, onions, mushrooms and garlic together
Add in thyme
Add in a couple good squeezes of mustard about 2 tablespoons

Preheat oven to 400

Remove and place puff pastry on a baking sheet

Slice both sides about 1 inch straps for folding over

Once mixture is cooked all the way through place down the center of the puffed pastry

Sprinkle down the center half the Swiss cheese
Layer on another squeeze of mustard

Fold straps over the top, giving each one a little twist to make it "fancy"

Wipe the top of the pastry with an egg wash

Sprinkle some thyme on top

Place in oven for 15 to 20 minutes or until pastry is golden brown on top and cheese has melted

Cool and eat!
