Born in the bustling streets of Lima, Lomo Saltado is the delicious result of two cultures falling in love. In the mid-1900s, Chinese immigrants brought their sizzling wok technique to Peru and married it with local ingredients — tender strips of beef, sweet onions, ripe tomatoes, and golden fries. The name “Saltado” means “jumped,” because the meat literally jumps in the blazing-hot wok. What started as a fusion experiment became one of Peru’s most iconic and mouth-watering national dishes.
