ELDERBERRIES!! Year 3 and it's the largest harvest so far! Almost to 5lbs already! (That's my 5th large bowl) Got some elderberry sugar infusing then going to work on a syrup and tincture. With my leftovers I'm deciding between a wine or mead!? Has anyone made either before? Suggestions?

I finally did it!!

I've been wanting to do this for a long time, and today I'm excited to launch the Stardust Homestead Journal! 💚

This journal is where I'll be sharing our homesteading adventures—the successes, the mistakes, the things I'm learning, recipes, gardening, herbal projects, beekeeping, animals, and all the little moments that make this lifestyle so rewarding.

Our very first entry follows my journey into making kombucha for the first time! 🍵 I share how I ended up with my first SCOBY, what I learned about the difference between a SCOBY and a pellicle, and the science (and patience!) behind brewing this centuries old fermented tea.
