Ground Beef & Green Chili Enchiladas

Brown a pound of VanWinkle Ranch ground beef. Saute some onions with it. Salt & pepper.

350⁰ oven
Spray baking dish with Pam.

Fill a Tortilla with beef mixture, generously add cheese (lots of cheese), top with a couple teaspoons of green chili's. I like the mild ones.

Fold and place in a baking dish seam side down. Pour green enchilada sauce over rolled tortillas. Add some more green chilis.

Bake for 15-20 minutes. Top generously with cheese. Bake another 5 minutes.

Our can be picked up at our local retail partners.

Our direct-to-consumer beef are hand fed every night and morning.

We will have several freezer beef available Jan-Mar time frame. Our spots are sold out till the end of the year.

The hot weather this summer had a negative impact on these cattle. They simply stopped eating for 4-5 weeks because of the heat.

The cattle we expected to harvest in September won't be ready till probably November.

Currently, taking names on our list, will ask for $200 deposit in November. If you would like to reserve a half, text or call me. 970-210-4292

Are you tired of hauling hay, yet? I kinda am....

That's the thing about this ranching gig, you just keep doing what needs done.🤠

Spotty rain created some very cool rainbows.

We had a very successful at the Fruita location today. Mark your calendar...4th Tuesday of each month.😊

Several new customers, some folks I have not seen for awhile, and some that found this more convenient. 🤍

We will continue to have weekly pickups in GJ every Thursday 4-6 pm.

Howard did a lot of mechanicing today. With Paisley as his helper.💕

Dean VanWinkle spent some time showing some areas of concern regarding fire mitigation. Working on a couple infrastructure projects.
Tayler VanWinkle worked on Pitchfork Design work.

✔️Found a bull we have been looking for and got him through a gate with some other cows.

✔️Caught a group of cows that were on the wrong side of a fence where a gate was left open.

✔️Put out salt.

✔️Checked water sources, including ponds and tanks.

✔️Never tightened the cinch and stepped in the saddle.

✔️A lot of bumpy miles in a side x side.

We took horses to the mountain, in case we needed them.

In the past, it would have taken someone 3-5 days to make the circle we made today. Checking water, distributing salt, checking health and well-being, looking at feed resources, fixing a hole in a fence, just being on the landacape and monitoring all of it.

It would have been done on a horse, today we made the miles on an ATV, with the horses on stand by, if needed.

It was a good day.

A good, but long day.

About 15 miles horseback after lunch. Closing in on dark when we got back to the pickup.

My saddle was pretty tired....

Found all the cows we were looking for today.🤍

A little rain, here and there....

A few more bales put in the stack when they dry out enough.

Some mechanic work.... never ending.

An excellent managed by Howard.

Several community and "extra-curricular" activities.

A rained out "movie" opportunity for Dean's family. It is a bit challenging to film between rain storms and fog rolling around.

Our dogs work hard with us.🖤🤍
They are all Border Collies.

We have a lot of new folks here and want you to meet them.

Kip is 13 years old. Very retired, getting old but still toodling around.

is very active and quite the character.

TBone is the odd uncle. He is having some lameness issues and only goes on shorter days.

Pete is the lazy brother. Maggie is his Mom, Kip is his Dad. He will work when absolutely required. Sometimes, disappears for an hour or two, then re-appears to go to work. 🤠

Annie is a full sister to Pete, but not a litter mate. She has enough energy for 3 dogs.

All are excellent cattle dogs and work hard when needed. They make our lives better.
