Well this banana pudding ice cream is literally insane and so unbelievably easy!! Few ingredients, all together just work so well and I hope you try it because it’s SO GOOD!!!!!! We polished it off in one sitting lol but trust me, you’re going to want to double the recipe!

RECIPE:
3 Ripe Bananas (one sliced to add towards the end)
8oz of Cool Whip (or whip 2 cups of freshly whipped cream)
1/2 of a 14oz can of Sweetened condensed milk
Crushed golden Oreos

Simply puree the bananas in a food processor with the condensed milk, then fold into the whipped cream with the remaining banana and golden Oreos. Freeze for several hours before serving.

Such an easy recipe but an absolute STAPLE for us in the summer especially. The canned corn and hard boiled eggs are a MUST, I also like to add my homemade picked eggplant (didn’t have any left) and it’s just so good!! Recipe below! Feel free to add whatever you like but this is how my nonna makes hers and so that’s just how I make mine. Looks like nothing but somehow it all works so well.

RECIPE:
1 cup of Arborio rice, cooked al dente, drained and cooled
2-5oz cans of Italian tuna packed in olive oil (not albacore)
1-14.5 can of corn kernels
Handful of green castalvetrano olives, halved
Chopped parsley
About a cup of halved cherry tomatoes
Bibb lettuce
4 hard boiled eggs (stir half in and quarter the remaining two for the side as decor as nonna does)
Salt and pepper to taste
Good olive oil to taste
