🍫🍒 Hot Fudge Sundae Brownie Cheesecake 🍒🍫

Ingredients:

For the Brownie Base:

1/2 cup (1 stick) unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon alcohol-free vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Cheesecake Layer:

16 oz (2 packages) cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon alcohol-free vanilla extract

1/3 cup sour cream

For the Hot Fudge Topping:

1/2 cup heavy cream

4 oz semi-sweet chocolate, chopped

2 tablespoons light corn syrup

For the Sundae Toppings (Optional but delicious!):

Whipped cream

Maraschino cherries

Chopped toasted nuts (like pecans or peanuts)

Extra hot fudge sauce

Sprinkles (for a fun twist)

Directions:

Preheat and Prep:
Preheat your oven to 325°F (163°C). Line a 9-inch springform pan with parchment paper and lightly grease the sides.

Make the Brownie Base:
In a mixing bowl, whisk together melted butter and sugar until smooth. Add the eggs and alcohol-free vanilla extract, mixing well. Stir in the cocoa powder, flour, salt, and baking powder until just combined. Pour the brownie batter into the prepared pan and smooth the top. Bake for 20 minutes. Remove and let it cool slightly.

Prepare the Cheesecake Layer:
While the brownie base cools slightly, beat the softened cream cheese until smooth. Add in sugar and beat until fluffy. Mix in eggs one at a time, then add the alcohol-free vanilla extract and sour cream. Blend until smooth and creamy.

Assemble & Bake:
Pour the cheesecake batter over the baked brownie base. Tap the pan gently on the counter to remove air bubbles. Bake for 45–50 minutes, or until the center is just set and the edges look firm. Cool completely on a wire rack, then refrigerate for at least 4 hours (preferably overnight).

Make the Hot Fudge Topping:
In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add chopped chocolate and corn syrup. Let sit for 1 minute, then stir until smooth. Let it cool slightly before pouring over the chilled cheesecake.

Garnish and Serve:
Once the cheesecake is chilled and topped with fudge, decorate it like a sundae: dollop whipped cream, add cherries on top, sprinkle chopped nuts and colorful sprinkles, and drizzle with extra fudge if desired. Slice and enjoy!

🍫🥥 No-Bake Chocolate Coconut Bars 🥥🍫

Ingredients:

For the Coconut Base:

2 cups unsweetened shredded coconut

1 cup sweetened condensed milk

1 teaspoon vanilla extract

Pinch of salt

For the Chocolate Topping:

1 ½ cups semi-sweet chocolate chips

2 tablespoons coconut oil

Directions:

Prepare the Pan:
Line an 8x8-inch (20x20 cm) baking dish with parchment paper, leaving some overhang for easy removal. Lightly grease it if desired.

Make the Coconut Base:
In a medium mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Stir until everything is well mixed and forms a sticky mixture.

Press the Base into the Pan:
Transfer the coconut mixture into the prepared baking dish. Use a spatula or your hands to press it down firmly into an even layer.

Make the Chocolate Topping:
In a microwave-safe bowl or using a double boiler, melt the chocolate chips and coconut oil together. Heat in 30-second intervals if using the microwave, stirring between each until smooth and glossy.

Top the Coconut Base:
Pour the melted chocolate over the coconut layer. Use a spatula to spread it evenly.

Chill Until Set:
Place the baking dish in the refrigerator for at least 2 hours, or until the bars are completely set and firm.

Slice and Serve:
Once set, lift the bars out using the parchment paper overhang. Place on a cutting board and slice into squares or bars using a sharp knife.

Store:
Keep bars refrigerated in an airtight container for up to 1 week. They can also be frozen for longer storage.
