I am so excited about this chicken deli meat I made yesterday. I’ve had to be on a pretty restrictive diet lately, and that always pushes me to try out things I’ve been wanting to simply to keep things from feeling too monotonous. I saw a recipe awhile back for homemade deli meat. I mashed up a couple different ideas to create my own recipe, so here’s my recipe for no filler, no preservatives, no sugar, 3-ingredient Honey roasted chicken breast deli meat.
Ingredients:
3 pounds chicken breast
4.5 Tbs honey
4.5 tsp salt
Preheat oven to 250°. Cut your chicken breasts in a few smaller chunks and place in food processor. Process chicken until it’s all broken down. Add in salt and honey and mix. Shape meat into a log on a piece of parchment paper. Roll up and tuck in paper on ends so the meat is covered. Place on half sheet pan. (If you want to do less at once, you won’t need as long of a pan. This is what worked best for 3 pounds.)
Bake at 250° for around 2 hours. Check temperature at around 1.5 hours. The internal temperature needs to get to 165.
Chill for a couple hours in the fridge before slicing. Enjoy! ☺️
