Roasted EVOO & Herb Dusted Nutrient Dense Cauliflower & Red Onion with Organic Baby Spinach, Fresh Herbs, Lentils & Slivered Almonds topped with Protein Packed EVOO Za’atar Roasted Chicken Breast served with a side of Creamy Lemon, Herb Dressing...Absolutely Delicious, Nutritious and Gluten Free.
Thursday’s Meal - Pesto Chicken & Quinoa Stuffed Peppers with Roasted Garlic Zucchini, Summer Squash & Tomatoes:
Protein Packed Shredded Chicken Breast, Nutrient Dense Superfood Quinoa, Brown Rice & Organic Baby Spinach Blend with Housemade Pesto Stuffed in a Vitamin Packed Sweet Bell Pepper dusted with Mozzarella Cheese served with a side of Roasted Tomatoes, Zucchini & Summer Squash...Yummy and Gluten Free. If you have leftovers this makes a great bowl, chop up the pepper and mix with the filling…my family went nuts over this last summer!
