🍗 LOW-CARB AIR FRYER “FRIED” CHICKEN DRUMSTICKS 🍗

Crispy on the outside, juicy on the inside, and made without traditional flour! This is an easy low-carb way to get that fried-chicken taste right out of the air fryer.

🛒 INGREDIENTS

* 6 large chicken drumsticks, skin removed
* 3 cups almond flour
* 4 tablespoons chicken seasoning of your choice
* 2 large eggs
* 2 tablespoons heavy whipping cream
* Cooking spray

👨‍🍳 DIRECTIONS

1️⃣ Make the breading
Mix the almond flour and chicken seasoning together until well combined.

2️⃣ Make the egg wash
In a separate bowl, whisk together the eggs and heavy whipping cream.

3️⃣ Dip the chicken
Dip each drumstick into the egg mixture and turn until completely coated.

4️⃣ Bread the chicken
Roll each drumstick in the seasoned almond flour. Press and pat the breading firmly onto the chicken until well coated.

5️⃣ Spray
Lightly spray all sides of the breaded chicken with cooking spray.

6️⃣ Air fry

🔥 Cook at 375°F for 12 minutes.

Flip and cook at 375°F for another 12 minutes.

Flip one final time, increase the temperature to 400°F, and cook for 3 additional minutes to crisp the coating.

🌡️ Check the thickest part of the chicken without touching the bone. The drumsticks are ready when they reach approximately 176–180°F.

🌶️🍗 CREAMY GREEN CHILE & ONION CHICKEN 🍗🌶️

If you’re looking for a creamy, cheesy chicken dinner without loading it up with carbs, this one turned out great! The green chiles and onion give the sauce a ton of flavor, and I used unsweetened almond milk instead of heavy cream.

It’s an easy one-skillet meal that’s perfect served over cauliflower mash! 😋

INGREDIENTS:

🍗 3 boneless, skinless chicken breasts
🫒 1 tbsp olive oil
🧈 1 tbsp butter
🧅 ½ cup diced yellow onion
🌶️ 1 (4 oz) can diced green chiles, drained
🧄 3 cloves garlic, minced
🥛 1 cup unsweetened almond milk
🧀 3 tbsp cream cheese
🧀 ½ cup shredded Parmesan cheese
🧀 ½ cup shredded mozzarella cheese
🧄 1 tsp garlic powder
🧅 ½ tsp onion powder
🌶️ ½ tsp smoked paprika
🧂 ½ tsp salt
⚫ ¼ tsp black pepper

Optional: 3–4 slices cooked and crumbled bacon 🥓

DIRECTIONS:

1️⃣ Season both sides of the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.

2️⃣ Heat the olive oil in a large skillet over medium heat. Cook the chicken for about 5–6 minutes per side, or until the internal temperature reaches 165°F. Remove the chicken and set aside.

3️⃣ Add the butter and diced yellow onion to the same skillet. Cook for about 3–4 minutes, until the onion starts to soften.

4️⃣ Add the minced garlic and drained green chiles. Cook for another minute.

5️⃣ Reduce the heat to medium-low. Add the almond milk and cream cheese. Stir until the cream cheese melts and the sauce becomes smooth.

6️⃣ Slowly stir in the Parmesan and mozzarella. Let the sauce gently simmer for 3–5 minutes, stirring frequently, until it’s creamy and thickened.

7️⃣ Return the chicken to the skillet and spoon that creamy green chile and onion sauce all over the top. Cover and simmer on low for another 3–5 minutes.

🥓 OPTIONAL: Finish it with some crumbled bacon on top!

🔥 LOW-CARB SERVING IDEA:
Serve it over cauliflower mash and spoon some of that extra cream sauce over everything. Roasted broccoli, asparagus, or green beans would also be great on the side.

Creamy. Cheesy. A little kick from the green chiles. And you definitely don’t miss the heavy cream! 🌶️🧀🍗

🌶️🥓 SWEET CHERRY BACON-WRAPPED JALAPEÑO POPPERS 🍒🧀

Okay, these turned out GOOD! 🔥

I wanted to do something a little different with jalapeño poppers, so I added a little sweet to the heat. You get the spicy jalapeño, sweet cherry, creamy cheese, melted mozzarella, and crispy bacon all in one bite!

INGREDIENTS:

🌶️ 6 large whole jalapeños
🧀 4 oz cream cheese, softened
🍒 3 tablespoons cherry jelly
🧀 3 mozzarella string cheese sticks, cut in half
🥓 6 slices bacon

DIRECTIONS:

1️⃣ Cut the tops off the jalapeños and carefully remove the seeds and membranes, keeping the peppers whole.

2️⃣ Add the cream cheese and cherry jelly to a blender or food processor and blend until smooth and creamy.

3️⃣ Fill each jalapeño with the cherry cream cheese mixture.

4️⃣ Cut 3 mozzarella string cheese sticks in half. Push one half into the center of each stuffed jalapeño.

5️⃣ Wrap each whole jalapeño with one slice of bacon.

6️⃣ Place on a baking sheet and bake at 400°F for 25–30 minutes, or until the bacon is cooked and the peppers are tender.

🔥 If you like your bacon extra crispy, put them under the broiler for a minute or two at the end.

The combination sounds a little crazy, but it WORKS! The cherry gives you just enough sweetness before the jalapeño heat kicks in, and then you get that creamy, melted mozzarella center with the salty bacon. 🤤
