🍲🫚 Chicken Tinola is the comfort of home in a single steaming bowl: chicken gently simmered with ginger, green papaya, and leafy greens in a light golden broth. It is the soup Filipino families reach for on rainy days and whenever someone needs a little care.

Serves 4 | 45 minutes

INGREDIENTS
- 1 whole chicken, cut into pieces
- 1 thumb-sized ginger, sliced
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 tbsp fish sauce
- 1 small green papaya (or chayote), sliced
- 1 bunch chili leaves or spinach
- 6 cups water
- Salt and pepper to taste

INSTRUCTIONS
1. Saute the ginger, garlic, and onion until fragrant.
2. Add the chicken and cook until lightly browned.
3. Pour in the water and bring to a gentle simmer until the chicken is tender, about 25 minutes.
4. Season with fish sauce, salt, and pepper.
5. Add the green papaya and cook until just tender.
6. Stir in the greens, simmer briefly, and serve hot.
