Little baby cardamom buns (or as I like to call them, cardi b's) are here to give you a quick update on our store hours this week!

​🗓️ Friday & Saturday
📍 683 Georges Rd, North Brunswick, NJ
⏰ 8:00 AM – 2:00 PM (or until sold out!)

Everything in the cases will be available on a first-come, first-served basis. We'll share our menu closer to Friday so you can plan ahead.

If you have your heart set on specific treats, we definitely recommend coming by on the earlier side.

Keep in mind: Now that our storefront is open, we have officially retired porch pickups. All goodies must be picked up directly at the shop during business hours.

That said, keep an eye out - some incredible things are coming to Milltown late summer 2026. 😉

Hey, friends! Starting today and moving forward, you may notice a change in our packaging!

​We love our community, and we love our planet. That’s why we’re ditching the plastic and moving towards more eco-friendly packaging for our breads and pastries.

While some may consider this not as "pretty," we want to do our best to reduce our footprint as we grow. True artisan bread comes from nature, and its packaging should be able to return to it.

Tomorrow's drop has an official lineup!

​SOURDOUGH 🌾
​Classic Country: Our signature slow-fermented, crusty-on-the-outside, airy-on-the-inside everyday loaf.

​Olive & Polenta Sourdough: A savory favorite! Rich, briny kalamata olives folded into a gorgeous, golden polenta crumb.

​Mixed Fruit & Nut Sourdough: Heavily studded with sweet dried fruits and toasted nuts.

​Braided Pretzel Loaves: Beautifully braided with that signature deep-brown pretzel crust and a soft, chewy interior. Perfect for slicing, dipping, or ripping with mustard and more.

​SWEET TREATS 🍓🍋
​Strawberry Rhubarb Kolaches: Soft, pillowy sweet dough cradling a vibrant, house-made jam of sweet strawberries and tart rhubarb and vanilla bean cream cheese, finished with a buttery streusel. (Pictured in our post is sour cherry version!)

​Earl Grey & Lemon Scones: Delicate, tender scones infused with aromatic Earl Grey tea and brightened with a fresh lemon glaze.

​Brown Butter Chocolate Chip Cookies: Crisp edges, chewy centers, loaded with rich chocolate pockets and a sprinkle of crunchy sea salt.

​We will be in the kitchen experimenting all week so there may be a few other goodies for Saturday as well.

Hey everyone! We are still sorting through some final details at the shop, but let’s be honest - we all need some fresh bread in our lives. 🥖

​Instead of a traditional soft opening next week, we’re doing a special pre-order menu drop with a twist: pickups will be at our brand-new shop!

​📍 Where: 683 Georges Rd, North Brunswick, NJ 08902

🕒 Menu drops tomorrow (Sunday) at 5:00 PM on HotPlate

🛍️ Pickup: Saturday, June 6th - 9 am to 1 pm

​Some important deets:

​Pre-order & pickup only: This helps us test out our new kitchen equipment with a predictable headcount so we can fine tune! Of course, any extras will be posted on our social media pages next Saturday.

​Sneak peek only: Our full cafe setup won't be running just yet. Think of this as a quick chance to grab your favorite treats and get a first look at the new space we've been building for you.

Hey everyone! It’s been a minute since our last update (I promise for good reason - as explained below) and we wanted to pull back the curtain a bit.

​The space is looking beautiful, the ovens are ready, and we are primed to open our doors.

And then the universe said, "Fun! Let's break some stuff! Oh, and add in a dash of heat wave to make it extra spicy." 🔥

Here's the deal: We had planned on opening this week but right now, we’re working on getting our broken central air situation sorted out so you can enjoy your coffee and pastries in comfort (and so we don't overproof or melt our doughs!)

​Our current plan is to quietly crack the doors open for a small soft opening with our existing customers, friends, and family - TENTATIVELY next week - with so we can test out the workflow, dial in the coffee, understand who we need to bring onto the team, and generally get everything running smoothly.

​We aren't launching the official grand opening quite yet, but we are right on the finish line.

The rumors are true: Yes, we will have sliced bread!

Our commercial slicer is officially ready to go. But since so many of you have been asking about sliced loaves, we wanted to share a quick bit of baker science ahead of time:

​Patience is an ingredient.

​When a loaf comes screaming hot out of the deck ovens, the interior starches and steam are still setting. If we throw a hot loaf straight into the blades, it turns a beautiful, airy interior into a gummy mess.

​To make sure you get the absolute best quality, our loaves have to completely cool down before they can visit the slicer.

So when our doors officially open, just remember: good things take a little time to chill out first!

There’s something really emotional about looking back at where this space started compared to where it is now.

What began as an empty shell - full of dust, peeling up glued floors, demo, paint, long nights, second guesses, tears, dance breaks, and endless to-do lists - is slowly becoming our bakery. Every wall painted, shelf built, table assembled, and floor cleaned has been touched by our own hands with some help from talented pros along the way - thank you to NT&T Bianco Electric, and

I want to also take an extra beat to acknowledge the unwavering support of my partner, There is truly no way this bakery would exist without him. He has carried so much of the weight of this project — the heavy lifting, the problem solving, the constant pivoting, and all of the things people will never fully see behind the scenes. He believed in this dream just as deeply as I did, sometimes even more, and I honestly don’t know where I would be without him.

This process has taken time because building something meaningful takes time. We wanted to create a space that feels warm, welcoming, thoughtful, and truly ours. A place where good bread, coffee, conversation, and community can live together.

We genuinely cannot wait to welcome you all through these doors soon. We have a slow but intentional start planned and we are looking forward to seeing this place filled with the faces of all those who have supported us as well as some new friends too.

Thank you for cheering us on through every stage of this journey. Untamed Grain exists because of your encouragement, patience, and belief in what we’re building here.

Golden, flaky ramp + cheddar biscuits from yesterday’s Ramp Fest at Swampy Vale Farm. 🤌

There’s something special about baking with ingredients that only show up for a short window each year. Ramps bring that punchy, garlicky flavor that just feels like spring waking up.

Grateful to be part of a day that celebrates local food, good people, and the kind of flavors you can’t get year-round.
