A recipe from our self-isolation.
Pineapple Fritters
1 1/4 c all-purpose flour
1 1/2 tsp baking powder
1 tbsp sugar
1/2 tsp salt
1/4 tsp ground ginger
2 eggs
1/2 c milk
1 tbsp melted butter
2 cups fresh or canned pineapple, cut in 1 in pieces (if canned, drain well)
Cooking oil, such as grapeseed or canola
Whisk dry ingredients in a small bowl. Whisk eggs in a medium bowl, add milk and melted butter. Fold in pineapple.
Heat about 2 c high-heat cooking oil in a medium saucepan over medium-high until a thermometer registers 350 degrees (or test with small amount of batter). Drop in 2 tbsp of batter and fry, turning half way through, until dark golden brown. Let cool briefly. Cool the oil, strain and refrigerate for the next time you want to make fritters.
