Meringue Cookies are one of my favorite cookies. I love the crunchy texture and the creamy marshmallow center. They are so simple to make, and a perfect way to use up egg whites. They’re fun to “pipe” into stars– better yet, I like to make large shapes with an indentation. Once baked, they are filled with fresh whipped cream and topped with fresh fruit. This Fresh Heirloom Tomato Galette is so delicious, that I’m quite sure it will convert non-tomato lovers into going back for seconds. The food processor pastry is a breeze to make. To prevent a soggy crust, heirloom tomatoes are lightly salted to drain out excess moisture. One more barrier is a thin layer of Dijon mustard and Gruyère cheese. Shallots and fresh thyme gives the tomatoes a savory component. While the galette was baking the aroma was intoxicating. It really got my mouth watering! End result: Tender, flaky pastry with no sogginess! Tomatoes are the star of this show, and I can assure you that you will love it as much as we did.

This Creamy Berry Trifle is a luscious dessert that is light and delicious. There’s a layer of Angel Food Cake, homemade White Chocolate Pudding, fresh berries and homemade whipped cream. (You can take a shortcut, using store bought cake, boxed pudding and dairy topping). I made the pudding and baked the cake a day before. The day of our dinner party, it took minutes to assemble this beautiful trifle. Our guests loved this dessert!

Burnt ends are flavorful pieces of meat cut from the point half of a smoked brisket. I’m one of those people who loves to eat the crunchy end of roasted or grilled meats. If you belong to this club, as well, you would love the crunchiness of the brisket– and that smoky taste! Grill Masters spend hours making these, as we personally experienced in Kansas City. Grilled Steakhouse Tips is also referred to as Flap meat or Sirloin Tips in, New England. It’s the cut of beef from the bottom sirloin part of the steer. With this recipe, the beef is marinated with brown sugar, soy sauce, plenty of garlic and a few other pantry ingredients. It’s quickly grilled over a gas (or charcoal) grill. The result is steak with a beautiful char and loaded with flavor. It’s one of our favorite summer grill recipes.

Paella is a rice dish from with roots from Valencia, Spain. There are so many variations of Paella. The saffron rice, infused with smoky Spanish Paprika, is the base of this dish. This recipe includes chicken, shrimp, chorizo and fresh clams. Cooking this dish on our Weber grill was fun to make, and not complicated. This recipe reminds me of the cheesy garlic bread that was once served at a local restaurant. Quite simply, French bread is bathed in a butter and garlic bath. A cheesy topping made of mayonnaise, cheese and green onion is layered on top and then baked until gooey and cheesy. Sublime!

Say hello to my favorite pie of all time– The Best Mile High Lemon Meringue Pie. This is not an ordinary meringue topping either! I’ve added marshmallow fluff for the creamiest, dreamiest meringue ever! The lemon filling has the perfect balance of tart and sweet and the pie crust is buttery and so flaky and tender. You will love this pie!
