Mediterranean Baked Fish
Ingredients:
4 white fish fillets (like cod or tilapia)
1 cup cherry tomatoes, halved
1 small red onion, sliced
½ cup Kalamata olives, pitted
2 tbsp olive oil
2 tbsp lemon juice
1 tsp dried oregano
1 tsp garlic, minced
Fresh parsley for garnish
Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C). Place fish fillets in a baking dish. Toss cherry tomatoes, onion, and olives with olive oil, lemon juice, garlic, oregano, salt, and pepper. Spread the mixture over the fish. Bake for 15-20 minutes, until the fish flakes easily with a fork. Garnish with fresh parsley before serving.
