Mediterranean Baked Fish

Ingredients:

4 white fish fillets (like cod or tilapia)
1 cup cherry tomatoes, halved
1 small red onion, sliced
½ cup Kalamata olives, pitted
2 tbsp olive oil
2 tbsp lemon juice
1 tsp dried oregano
1 tsp garlic, minced
Fresh parsley for garnish
Salt and pepper to taste

Instructions:

Preheat oven to 375°F (190°C). Place fish fillets in a baking dish. Toss cherry tomatoes, onion, and olives with olive oil, lemon juice, garlic, oregano, salt, and pepper. 1 ½ cups sweetened shredded coconut
1 ½ cups chopped pecans
1 ½ cups graham cracker crumbs
1 cup brown sugar, packed
1 cup granulated sugar
5 egg whites
1 tsp vanilla extract
Whipped cream (for topping)

Instructions:

Strawberry Crunch Cheesecake Cups

Ingredients:

1½ cups crushed golden Oreos
¼ cup melted butter
16 oz cream cheese (softened)
½ cup sugar
1 tsp vanilla extract
1 cup heavy cream (whipped)
1 cup crushed freeze-dried strawberries
Fresh strawberries for garnish

Topping:
½ cup crushed golden Oreos
½ cup crushed freeze-dried strawberries

Instructions:

Combine crushed Oreos and butter, press into the bottom of 12 cupcake liners.
Beat cream cheese, sugar, and vanilla until smooth. Fold in whipped cream and freeze-dried strawberries.
Spoon cheesecake mixture over crusts. Chill for at least 2 hours.
Mix topping ingredients and sprinkle on top. Garnish with fresh strawberries.

Ingredients:

1 lb shrimp, peeled and deveined
1 lb andouille sausage, sliced
½ cup vegetable oil
½ cup all-purpose flour
1 onion, chopped
1 green bell pepper, chopped
2 celery stalks, chopped
4 garlic cloves, minced
1 can (14.5 oz) diced tomatoes
4 cups chicken broth
1 tbsp Creole seasoning
1 tsp thyme
2 bay leaves
1 cup okra, sliced
2 cups cooked white rice

Instructions:

Heat oil in a large pot, then whisk in flour to make a roux. Stir constantly until the roux turns a deep brown. Add onion, bell pepper, celery, and garlic; sauté until softened. Stir in sausage, tomatoes, broth, Creole seasoning, thyme, and bay leaves.
