While in Puerto Rico, I was able to find a place selling locally sourced honey from hives found on the west end of the island between Rincon and Cabo Rojo. This honey has a very rich, almost spicy flavor profile like nothing I’ve tasted before. I look forward to using this to make a small batch of mead. Should be super interesting.
