You know that giddy excited feeling you get when you open the boxes at the butcher and everything is PERFECT??

Yea, me too ✋️

For me, this may be the closest thing to the feeling of a kid opening their Christmas gift. The butcher and I have been on the phone A LOT this week making sure we got these cuts right and I'm so excited to get these to your Christmas table!

A little bird tells me we will have cookies at the shop Monday for anyone picking up or shopping 🎅

I heard from 2 customers last week that really hit home for me. Our meat formed a memory for them, and in my mind, that's the highest compliment we could receive. Good meat isn't just a one-time deal. Good meat is MEMORABLE!

"This Boston Butt brought back memories of my mom's pork roasts. I've cooked other pork before, but it hasn't ever smelled like this. Your pork roast took me right back!"

From a customer at : "Oh yea, I had a tomahawk steak from your guys several years ago. It was the best steak I've ever had!"

I had the opportunity to tour the Hatfield Pork Processing plant today. As a supplier to them, we send the same quality Hogs to Hatfield as we do to you, our customers.

So my question to them was: "Why is there such a difference in taste when you buy pork from local farms versus the grocery store when we send the same high quality Hogs both places?"

Their answer?   "Shelf life".

Pork and Beef that we sell direct to you is frozen immediately, preserving freshness. Pork and Beef sold through typical supply chains is kept unfrozen but stored in a warehouse before distribution and then sits on the shelf until it is bought.

Their other notable comment: "we process pigs for their bellies. We dont need anything else but we need the bacon"

Us too! We cant seem to keep after the demand for our Nitrate Free, Thick Cut BACON 🤭

It's another week of shipping out beef and Hogs and nagging the butcher constantly on our customers' behalf.

Somedays, I don't know if they love me or hate me 😅

We love that we get to work so closely with all aspects of the food chain- from the farm, to some of the best butchers in the area (we've tried a number and stuck with the ones we like!), to your plate!

Next on the list: calling you for your custom cutting instructions!

P.S. we were stoked this day when we got to see OUR OWN BEEF hanging in the butcher's cooler- usually we leave this phase in the hands of our butchers so it's not every day we get to see this. Yep, those are our steers in the pic 🥩
