Brewing a hazy IPA today. After adding 0.5oz Magnum as a bittering hop, I decided to not add anymore hops until the whirlpool stage. This is by far the biggest whirlpool addition that I have ever made. It is a mixture of Nelson Sauvin, Motueka, Citra and Dolcita hops. I will also be doing a dry hop. I'm really curious how this one turns out.

Join us September 19th at Ford Town Fun Fest in Flora, IL. We will be bringing a couple new beers. Plus one that took 1st place at a competition earlier this year. Our lineup will be El Diablo Dulce (a Mexican hot chocolate beer that has been barrel aged), Bavarian Brew (a traditional Marzen that has been aging for 5 months now), Buzz Lightbeer (an orange blossom honey and honey crisp apple beer) and Questionable Decisions (a hazy IPA that will remain silent on what's in it).

Today I revisited the remaining 5 gallons of El Diablo Dulce that has been barrel aging for 9 months now. The spice has mellowed out a bit. But the chocolate, oak and vanilla notes have come together as one cohesive flavor. I will let it continue to age. Then it will be kegged for the next brew fest.

After a lot of thought, I've decided to give my Fatherly Fizz a break for at least the next competition. This was a tough decision. Because that was the 1st recipe that I ever made on my own. But it did good in competition. I entered it into 4 competitions and it won 1st place twice. The IPA at the next competition will be an IPA inspired by a prohibition era cocktail. This one will be interesting.

My next competition is months away. But good brews need time. So I'm starting my, yet to be named, caramel apple cider today. Later this week or weekend, I will be brewing a lager and stout for the same competition. I also think I'm going to up my brew count to 6 for this next one.... a cider, a lager, a stout, an IPA, a pale ale and a wheat ale.

My mind never stops thinking about the next brew. We're only a few hours removed from one festival and I'm already thinking about my lineup for the next one. There will be some 'Wow-factor' beers at the next one. Including 'Peanut Butter Jelly Time'... a wheat beer inspired by every child's favorite sandwich.
