Today I revisited the remaining 5 gallons of El Diablo Dulce that has been barrel aging for 9 months now. The spice has mellowed out a bit. But the chocolate, oak and vanilla notes have come together as one cohesive flavor. I will let it continue to age. Then it will be kegged for the next brew fest.

After a lot of thought, I've decided to give my Fatherly Fizz a break for at least the next competition. This was a tough decision. Because that was the 1st recipe that I ever made on my own. But it did good in competition. I entered it into 4 competitions and it won 1st place twice. The IPA at the next competition will be an IPA inspired by a prohibition era cocktail. This one will be interesting.

My next competition is months away. But good brews need time. So I'm starting my, yet to be named, caramel apple cider today. Later this week or weekend, I will be brewing a lager and stout for the same competition. I also think I'm going to up my brew count to 6 for this next one.... a cider, a lager, a stout, an IPA, a pale ale and a wheat ale.

My mind never stops thinking about the next brew. We're only a few hours removed from one festival and I'm already thinking about my lineup for the next one. There will be some 'Wow-factor' beers at the next one. Including 'Peanut Butter Jelly Time'... a wheat beer inspired by every child's favorite sandwich.

Mt. Vernon Brewers Festival was a great time today. We did not take home any awards. But Melted Dreams was a huge hit. The festival-goers drank all 5 gallons before we made it to 2pm. It was also great seeing everyone! We can't wait to serve at our next event!

Here's the lineup for the brew fest at The Big Red Barn in McLeansboro, IL on February 21st.

Fatherly Fizz Hazy IPA - Fatherly Fizz is brewed with Citra, Galaxy and Nelson Sauvin Hops. It has taken 1st place in the IPA category at 2 different competitions.

El Diablo Dulce - This is a chocolate stout that was aged in a bourbon barrel with German chocolate and serano & ancho chiles.

Azacca the Hut - The original version of this beer is a single malt, double hop IPA. But I needed a fruited beer. So I added pineapple juice in the wort. I also added one more hop and mango puree will be added. This version is brewed with 2-row malt, azacca hops, citra hops and New Zealand Motueka hops.

Judge's Reserve - This is a hybrid American/English brown ale that was brewed with Magnum, Willamette and Kent Goldings hops.
