The Italian cookie that isn’t actually from Italy!

If you go to Italy looking for a “Rainbow Cookie,” you might be searching for a while. That’s because this beloved bakery staple is actually a New York creation!

In the late 1800s and early 1900s, Italian immigrants arriving in New York City wanted to honor their heritage. Using almond paste and sponge cake, they created a treat that mirrored the Tricolore, the Italian flag.

Green, White, and Red almond sponge layers are sandwiched together with raspberry or apricot jam and topped in a hard chocolate shell.

While we know them as “Rainbow Cookies” today, you’ll also hear them called as seven layer cookies, or tricolor.

Whatever you call them, they are a true symbol of Italian American culture! 🇺🇸🇮🇹
