Lemon chicken and white beans — a GLP-1 friendly dinner that takes one pan and about 30 minutes.
Sear four boneless skinless chicken thighs hard, 5 to 6 minutes a side, then take them out. Garlic into the same pan, then a can of drained white beans and half a cup of broth, and scrape all the browned bits off the bottom. Simmer three minutes, wilt in two big handfuls of spinach, squeeze in half a lemon, and put the chicken back in.
Two things make it work. The beans cook in the chicken drippings, so they taste like they took an hour. And thighs stay good if dinner gets interrupted — breasts turn to rubber.
Whole pan is around 100g of protein and it keeps four days. Better on day two.
