A foolproof recipe
The green chicken pozole is a Mexican culinary classic, highlighted by its delicious broth made with tomatillos, green chiles, and fresh herbs.

📝 Ingredients (serves 8)
For the pozole
1 kg chicken breast and thighs
1 kg precooked pozole corn
3 liters of water
½ onion
4 garlic cloves
2 bay leaves
Salt to taste
For the green sauce
700 g green tomatillos
2 poblano peppers
2 serrano peppers (or to taste)
1 jalapeño
1 cup cilantro leaves
½ cup epazote leaves
½ cup parsley leaves
¼ onion
2 garlic cloves
1 teaspoon cumin
1 cup cooking broth
To serve
Lettuce or finely chopped cabbage
Sliced radishes
Chopped white onion
Sliced avocado
Lime wedges
Dried oregano
Tostadas
Chopped green chili (optional)

👩‍🍳 Preparation
1. Cook the chicken
Place the chicken in a large pot with the water, onion, garlic, bay leaves and salt.
When it starts to boil, skim off the foam from the surface and simmer over medium heat for 35 to 45 minutes, or until the chicken is fully cooked.
Remove the chicken, shred it, and strain the broth.

2. Make the green sauce
Boil the tomatillos for 8 minutes.
Roast the poblano peppers until the skin is slightly blistered, place them in a bag to sweat, peel them and remove the seeds.
Blend the tomatillos, poblanos, serranos, jalapeño, cilantro, epazote, parsley, onion, garlic, cumin, and one cup of the broth until you get a smooth sauce.

3. Cook the pozole
Pour the sauce into a pot and cook for 8 minutes, stirring constantly.
Add the chicken broth and the pozole corn. Cook 20 minutes to let the flavors meld.
Stir in the shredded chicken and cook 10 minutes more. Adjust salt to taste.

4. Serve
Serve the pozole hot and accompany with lettuce or cabbage, radishes, onion, avocado, oregano, a few drops of lime, and crispy tostadas.

💡 Tips
Use ripe tomatillos for a perfect balance of acidity and flavor.
Epazote adds traditional flavor, but if you can’t find it you can slightly increase the cilantro.
If you want a spicier pozole, add more serrano peppers or a habanero when serving.
As with many traditional stews, the flavor deepens the next day.

4 large ears of corn, kernels removed (approx. 3 cups of kernels)
3 large eggs
1 can sweetened condensed milk (390 g)
100 g melted butter
1 teaspoon vanilla extract
1 cup all-purpose flour (130 g)
2 teaspoons baking powder
¼ teaspoon salt
½ cup grated Manchego or mozzarella (optional, for a creamier texture)

👩‍🍳 Preparation
1. Blend the base
Place in the blender the corn kernels, eggs, condensed milk, melted butter, and vanilla. Blend for 1–2 minutes until you get a creamy mixture. If you prefer a cake with more texture, leave some small corn chunks unblended.

2. Prepare the batter
Pour the mixture into a large bowl. Add the flour, baking powder, and salt, mixing with gentle motions until there are no lumps. Incorporate the grated cheese if you want a moister cake with a slight salty touch.

3. Cook in the skillet
Lightly grease a deep 24–26 cm nonstick skillet with a lid. Pour in the batter, smooth the surface, and cover well.

Creamy Tomato Tortellini

💡 Subs: Use plant-based cream if you prefer, and kale works just as well as spinach!



Ingredients
• 1 shallot, minced
• 1.5 cups cherry tomatoes
• 1/2 cup roasted red peppers
• 1 tbsp tomato paste
• 1 tsp salt
• 2 tsp Italian seasoning
• 1/2 tsp garlic powder
• 3/4 cup cream (or plant-based!)
• 1/2 cup parmesan
• 1–2 cups chopped spinach
• 2 cups cooked cheese tortellini
• Optional: 1/2 tsp red pepper flakes



How to Make It

1️⃣ Warm 1 tbsp olive oil in a large skillet over medium-low. Add the shallot and sauté 1–2 minutes.
2️⃣ Add cherry tomatoes and cook 8–10 minutes until softened.
3️⃣ Stir in roasted red peppers, tomato paste, seasonings, and cream. Let everything melt together.
4️⃣ Add parmesan, tortellini, and spinach. Simmer a few minutes until creamy and dreamy.
5️⃣ Finish with extra parmesan before serving.
