We use chicken breast for our chicken tamales, pork roast for the pork and fresh pinto beans for our bean tamales.

So yesterday was a first for me. I catered a small Christmas dinner. 6dz tamales, red enchiladas, rice, beans, papas, salsa, creama, avocado, salad. It was a success! They day before my daughter and I fulfilled 60dz.
