One of the funny things about vacation rentals is that you rent the house so everybody can spend time together — and then dinner comes around and somebody disappears into the kitchen.

Or somebody's making a store run.

Or eight people are back in the cars trying to find a restaurant that can seat everybody.

That's a big reason private dining makes sense to me for a vacation house.

You already have the important part: the people you came with and a table to sit around.

I shop for what dinner needs, come to the house, cook in your kitchen, serve the meal, and clean up my part when I'm done.

The person who organized the trip doesn't have to spend the evening cooking for everybody else.

They get to sit down too.

That's really the whole idea behind Ozark Table.

Most people think cooking is about recipes. In a professional kitchen, timing can wreck a good plate faster than a bad recipe.

A steak can be cooked perfectly, but if it sits five minutes waiting on the potatoes, it's not perfect anymore.

Years of banquet work taught me to work backward from one question:

When does this plate need to hit the table?

Then you build everything around that. Heat, resting time, sauces, sides, plating — all of it.

I've done that for small dinners and for events serving thousands of people.

What I'm looking forward to with Ozark Table is taking all those years of timing and repetition and bringing them down to one table.

Not hundreds of plates. Just your dinner, hot and ready when it ought to be.

I've worked in kitchens where every plate got looked at like it was going under a microscope. That's useful training. It teaches discipline.

But the people eating dinner shouldn't feel like they're taking a test.

That's one of the things I want Ozark Table to get right.

I want to cook the way I know how: good product, proper technique, attention to the little things, and a plate I'm proud to put down. Once it leaves the kitchen, though, the night belongs to you.

Laugh too loud. Pour another glass. Stay at the table. Let dinner run long.

Good food doesn't need to make a room stiff.

I can take the cooking seriously without asking the guests to.

That's my kind of dinner.

I’ve spent most of my life in kitchens.

I started washing dishes at 15.

From there it was prep, fry, grill, management, culinary school, banquet kitchens, country clubs, and eventually executive chef roles.

I’ve cooked for small tables.

I’ve cooked for thousands.

And for a long time, I wore the 70- and 80-hour weeks like they were just part of the job.

That kind of life teaches you a lot.

But it also takes a lot.

After nearly 30 years, I still love cooking just as much as I ever have.

What’s changed is what I want my life around it to look like.

I don’t want to spend the rest of my career chasing the next huge kitchen, the next title, or the next 80-hour week.

I want to cook for people.

Really cook for them.

I want to be in a home, making dinner for a family or a group of friends, and actually see the moment when everybody sits down together.

I want the person who planned the dinner to get to enjoy it too.

I want the table to matter as much as the food.

That’s why I’m building Ozark Table.

It’s still about cooking.

It’s just about doing it in a way that feels a little more human.

A little slower.

A little more personal.

And a lot closer to why I fell in love with this work in the first place.

Local doesn’t automatically mean better. Better means better.

When I’m choosing ingredients for Ozark Table, I want to look close to home first.

I took this photo at Bansley’s Berkshire Ridge Farm. I’ve cooked with their product before, and it’s exactly the kind of quality that makes me excited about what’s available right here in our region.

But I’m not going to put something on a plate just because it came from down the road.

The season has to be right.
The product has to be right.
And most importantly, it has to be right for the dish.

That’s how I’ve cooked for nearly 30 years.

Local when it makes sense. Quality always.

That’s the kind of table I want Ozark Table to be.

There’s nowhere to hide on a simple plate.

I’ve always said: Anybody can put 37 things on a plate and cover it up. It takes a real chef to put five things on a plate, because there’s nowhere to hide and everything has to be done to perfection.

For me, that isn’t a literal rule that every plate gets five components. It’s a way of thinking about food.

If there are only a few things on the plate, the protein has to be cooked right. The sauce has to make sense. The vegetables have to taste like themselves. Every element has to earn its place.

That’s the kind of food I want Ozark Table to be about: thoughtful, restrained, and done right — not complicated just to look impressive.

What does private dining actually mean?

For me, it’s pretty simple.

You invite the people you want around the table. I come to you, bring the ingredients, and handle the meal in your home or vacation rental.

The prep, cooking, plating, service and cleanup all happen there.

No fighting for a reservation.
No getting a whole group back into cars after a long day.
No spending your evening stuck in the kitchen while everyone else is enjoying themselves.

You get to sit down, eat well and actually be part of the night.

That’s the idea behind Ozark Table.

We’re still in prelaunch right now, and I’m building this one dinner, one menu and one detail at a time.

I started washing dishes at 15. About 30 years later, I’m building something more personal.
I’ve spent most of my life in professional kitchens — working my way from dishwasher to prep cook, fry cook, grill cook, kitchen manager, sous chef, and eventually into executive and banquet chef roles.
Along the way I’ve cooked everything from intimate plated dinners to events serving thousands of people.
But after decades of long restaurant and chef hours, I wanted to find a different way to keep doing the part I’ve always loved most: cooking for people and bringing them together around a table.
That’s what Ozark Table is becoming.
Ozark Table will bring private dining into homes and vacation rentals across Northwest Arkansas and select Ozark destinations. I come to the kitchen, cook the dinner, serve the meal, and let you spend the evening with the people you invited over in the first place.
We’re still in prelaunch right now. I’ll be sharing the test cooks, the food, the stories behind the dishes, and what it takes to build this thing from the ground up.
If that sounds like something you’d enjoy following, I’d love to have you along.
