Meet our Netarts 🦪

Think of them as our Tørkes’ slightly more grown-up sibling. Give a Tørkes a little more time in the bay, and you get a Netarts — a bigger oyster with all that bold, briny Netarts Bay flavor.

With our Netarts, you basically get the best of both worlds. They’re still a great size to shuck and eat raw, but also perfect for briefly throwing on the grill.

Raw oyster person? Netarts.
Grilled oyster person? Also Netarts.

Basically, they’re the oyster that doesn’t make you choose. 🦪

At Haystack Shellfish Co., we don’t store our oysters in holding tanks. We take each customer’s specific order by email and harvest your oysters just before your scheduled pickup, so they reach you as fresh as possible.

No background music needed. Just the wind, the gulls, and oysters being hand harvested with care.

In Netarts Bay, oysters are harvested by hand; no mechanical dredging destroying the local marine life and eel grass. Just boots in the mud and a little more time. It’s slower work, but it’s one of the things that helps keep this bay beautiful.

The Newport Seafood & Wine Festival returns this weekend, and Haystack Shellfish Co. will be there.

Join us at the Port of Newport (South Beach) where we will be serving in the festival’s Raw Bar Tent, featuring our Netarts Bay Tørkes oysters alongside a limited offering of our farm-grown Netarts Bay Kumamoto oysters. Quantities of Kumamotos are extremely limited and expected to sell out.

On Saturday and Sunday, we are also pleased to welcome a special guest: Chef Maylin of Nácar Oysters, who will be curating our oysters into thoughtfully composed delicacies that highlight the distinctive character and flavor of Oregon-grown oysters.

We invite you to experience fresh-shucked oysters, chef-crafted specialties, and one of the Oregon Coast’s most celebrated food and wine gatherings.
