What exactly is “sweet meat” on a scallop? 👀

On a North Atlantic sea scallop, the “sweet meat” is the small, firmer side portion of the adductor muscle, the muscle that allows a scallop to close its shell. It is completely edible, but because it can be chewier than the main scallop meat, it is often removed before cooking.

To remove it, simply pinch it and gently pull it away from the scallop, just as you see here.

It’s a small preparation step that helps create that signature tender scallop texture.

Haddock Fun Fact!

Did you know haddock can be recognized by the distinctive dark spot above their pectoral fin? Often called the “Devil’s thumbprint,” this marking is one of the species’ most recognizable features.
